    Minted Mango and Lime Chicken on a Stick

    A busy day, picky preschooler, and a kitchen fire, oh MY!

    First let me just say I'm a mom with a full time job and her own business. The busy day part of this story is nothing new. 🙂

    The picky preschooler? *sigh* I fear my son is JUST LIKE HIS FATHER!!

    I don't know where I'm going wrong. I give him variety. I let him help in the kitchen. I never force anything down his throat. Yet he still automatically dislikes new things. He argued with me all the way home that he didn't like mango sauce, even though the kid inhales fresh mangos weekly! I then present to him the dish and he's gives me the face. You know that face. Upper lip curled. Eyes squinted with a look of disgust. Ugh! I hate that face! Funny thing is he didn't like the chicken on the stick yet when I took it off and cut it on his plate he devoured a whole tender. So you be the judge. lol

    Ok, the fire. You'll know I can't grill in my apartment, right? Well that's how I really wanted to prepare the chicken but since the option was taken off the table I decided to go with a broiling method. No big deal until... dun dun dun... I closed the electric stove with un-soaked wooden skewers! YIKES!

    Lesson learned.. lesson learned. 🙂

    Ingredients

    • 1 mango cubed
    • juice of a lime
    • 1 tablespoon honey (21g)
    • Pinch of dried mint leaves (about â…› tsp)
    • About a pound of chicken tenders (or boneless breasts cut into tender like pieces)
    • Kosher salt & fresh ground pepper

    Instructions

    I think this would better grilled but I'll right up how I prepared it.

    pre-heat the broiler.

    Puree the mango, lime juice honey and mint leaves.

    Place the chicken on skewers and season with salt and pepper.

    Pour the mango puree on the chicken and let site for at least 10 minutes. (I made the toddlers lunch while waiting 🙂

    Lay the chicken on a broiling pan pouring any extra puree on top. Broil about 5-6 minutes a side depending on the thickness of your chicken.

    I served with everyone's favorite.. PEAS! Something, I have to admit, the kid eats without argument. 🙂

      Kitchen Fires?

      OMG...they are the worst. We had one on July 16th and have been staying in a hotel since then. We ARE getting a beautiful new kitchen out of the deal but in the meantime we have the nightmare of eating out for EVERY meal and I could sure use advice on how not to let that kill me! I am so sick of restaurants...never thought I'd say that but it's true.

      My daughter was cooking french fries on the stove in a frying pan with oil...and forgot the stove was on when she went to the bathroom. YIKES...and it was only 9:30 IN THE MORNING!!!!!

      We've spent hours packing stuff up and taking inventory of all the stuff that the clean up crew can't get clean and we've been to many different stores to price all the items...840$ just in my pantry! That doesn't include the small appliances!!!!

      It's been a struggle and I could use some advice!

      Chicken on a stick! Hee hee! (I think there's something improperly wired in my brain. The concept is making me giggle uncontrollably.)

      That sounds very yummy. I'm always looking for new ideas, and I think I've found one here. Now to get a kitchen impliment that'll puree mango...

      I suppose you could call your chicken "flame broiled!" Sounds delish! I love mango and chicken. Can't wait to try this, even though my husband does NOT like fruit on his meats. Too bad for him!
      You haven't gone wrong with Ryan. You are doing just fine with him. As many have said, it is only one of many phases to come. My oldest daughter, as a 4 year old wouldn't eat any meat unless we said it was steak. Now, at 22 years old, she doesn't like anything BUT chicken. Go figure!

      This sounds So good Roni and I have way too much mint in the garden so Great idea!! Ok, the picky toddler, I deal with this All week long as a feeding therapist...in fact our blogs complement each other wonderfully, i have a link to yours on mine!       Hang in there with Ryan--I too have been through the phases--ages 4 and 5 were particularly difficult--in fact my younger son (who is now 10)ate a hot dog EVERYDAY during his kindergarten year, much to my dismay! I couldn't even get him to eat a peanut butter sandwich, let alone a green vegetable or some fruit. And yet when he was 2 and 3 he ate pretty much anything and now we are back to eating a decent variety. Shrimp and broccoli are his current faves! Same experience with my older son, now 18 and just announced the other day how much he loves strawberries, wouldn't touch them for years--go figure! By the way, around age 14-15 most active boys will eat anything that isn't nailed down--in large quantities!

      Roni - - keep doing what you are doing with Ryan! My son has gone through phases as well (for about a year all he wanted was burgers and turned up his nose at almost anything else!). . . but now that he is almost 14 (scary!) he eats most things and really enjoys them. I mean last night he wolfed down a pile of szechwan green beans and some grilled shrimp with brown rice! And I remember age 4 being a particularly difficult year . . . they really test their independence and that means with food too! I vividly remember a day where he drove me so nuts I sent him to bed at 5pm and even brought his dinner to his bed I was so angry at him... of course now I can't remember what he did . . .:-)

      I was wondering if *I* did something wrong, because my boys both ate really well with a wide variety of healthy things when they were little, but once they turned 5, they have become SUPER PICKY. Now that I see Ryan is a little picky, I don't feel so bad!! The chicken sounds great.

      p.s. I hate my electric broiler...scary!

      wondering if you could put some of the sause aside so after grilling you can drizzle a bit on. Of course before adding the chicken to it. What do u think???
