
Sorry for my lack of posts. The holidays hit along with a bad case of bronchitis. I'm still battling cough and fever. 🙁
I stayed home from work today and when I got hungry I reached for the leftovers, of course. I mean what else is there in the fridge the week after Thanksgiving? I had a plate full of turkey and some veggies. All I needed to make a tasty lunch. 🙂
Ingredients
- 1 slice of sweet onion chopped
- ½ of a small bell pepper chopped
- ½ small tomato diced
- 2 oz leftover turkey meat (or ay leftover protein)
- ½ teaspoon chili powder
- ½ teaspoon dried cilantro
- ¼ teaspoon cumin
- ¼ teaspoon garlic powder
- 1 large tortilla or two small (I used a Flat Out Wrap)
- 1 oz fancy shredded mexican cheese blend
- non-stick cooking spray
- Kosher salt
Instructions
Heat a small skillet over medium high heat and spray with non-stick cooking spray. Add the onions and a pinch of salt. Cook until just browning.
Add the peppers and lower the heat to medium.
Add the tomato, turkey, and spices. The juices should come out of the tomato holding everything together. Cook, stirring for about a minute letting the flavors merge. Shut off the heat.
Warm a larger skillet over medium heat. Lay the tortilla in the pan sprinkling it with ½ of the cheese. Add the turkey mixture, top with the remaining cheese then fold over. Weigh it down with something like a kettle full of water.
Cook for about 2 minute until the side down browns and gets crunchy. Flip and cook for another minute.
Serve with salsa! 🙂
No time to do nutritional info, it will depend on your tortillas anyway. For my WW friends, I count this as 5WWP using the light Flat Out Wraps.

I hope you feel better, Roni! I had the same cold. It was awful. I think it stuck with me for 10 days and then all of the sudden, it just left. Great looking panini thing! What a great way to get rid of some of the leftovers.
