Leftover Turkey Quesadilla with Cranberries and Gouda

I had a little Gouda leftover from this years Harvest Salad and decided to put all the same flavors from the salad into a quesadilla. I just can't get enough of the smokey gouda/sweet craisin combo. It goes great with turkey and adding in the earthy Brussels sprouts rounded everything out. Dip it in a little leftover gravy and you got a taste of heaven.

Leftover Turkey Quesadilla with Cranberries and Gouda

  • 1 Large Tortilla or Flat Bread
  • 1oz gouda cheese grated
  • 2oz leftover turkey
  • 1-2 leftover roasted Brussels sprouts (or a handful of spinach or salad greens would be great)
  • 10g of Dried Cranberries (or a smear of cranberry sauce) chopped

Heat a non-stick skillet over medium high heat and spray with non-stick cooking spray.

Lay the tortilla in the skillet sprinkling half of it with ½ of the cheese. Add the turkey, brussels sprouts and dried cranberries, top with the remaining cheese then fold over. Weigh it down with something like a kettle full of water and cook for about 2 minutes. Flip and cook the other side for an additional minute until the cheese is melted and the ingredients are warmed through.

I served it with a quick side salad for a complete lunch.

    I was just trolling the Internet for leftover turkey recipes. Your turkey quesadillas with gouda sound so great - they're the winner in our house. I can't wait to taste them with my leftover, homemade cranberry sauce. Yum:)

    I bought kale and muenster cheese to put on this instead of the sprouts and gouda. Is that gross?

    One of my favorite sandwich combos is low-sodium turkey + Laughing Cow blue cheese + cranberry sauce (usually Trader Joe's, which I love because it comes in a jar and not a can) + spinach or arugula. Gouda and leftover Thanksgiving turkey would take it to a new level!
