    Fast Salisbury Steak with Noodles

    This is a staple in my house and one of the husband’s absolute favorites. Normally I make it with a can of French Onion Soup thickened a bit for the gravy but Friday I was all out. So I do what I do best, and hit the pantry. Staring me in the face was a can of Healthy Request (low fat) Cream of Mushroom Soup and it was a lucky find! I like this better then my original version.

    I use cereal and oats instead of breadcrumbs in the meat mixture. This is similar to my weird fascination with breading things without breadcrumbs. I think it’s fun , plus it adds more fiber and nutrition. You should try it, no one will ever know. SHHhhhh It could be our little secret.

    Ingredients

    • 8 oz lean ground beef (at least 95% lean) or ground turkey
    • ½ cup of fiber one or all bran cereal
    • ½ cup oatmeal
    • 2 egg whites
    • 2 tablespoon Worcestershire sauce (separated)
    • 1 teaspoon onion powder
    • 1 teaspoon garlic powder
    • 1 teaspoon dried parsley
    • Non-stick cooking spray
    • 1 10oz can of low fat cream of mushroom Soup or a can of french onion soup
    • 6 oz whole wheat egg noodles (Ronzoni Healthy Harvest Whole Wheat Wide Noodles)

    Instructions

    Ground the cereal in a blender or food processor.

    Prepare the noodles according to package.

    While boiling the water, combine the beef, ground cereal, quick oats, egg whites, 1 tablespoon Worcestershire sauce, onion powder, garlic powder, and dried parsley.

    Form the mixture into 4 patties, each a little more then 3 oz each.

    Brown the patties in a large frying pan sprayed with non-stick cooking spray over medium high heat about 3-4 minutes a side.

    Whisk the soup, ¾ can of water (the soup can) and the remaining tablespoon of Worcestershire sauce. Pour soup mixture over patties. Lower the heat to simmer and cover. Cook for about 10 minutes.

    Once the noodles are done, remove the patties from the skillet and set aside. Drain the noodles and add to the skillet. Stir to coat the noodles in the soup mixture.

    Serve with a side of your favorite veggies!

      i just finished eating this, and it was super good! i used the mushroom soup, and instead of the cereal, i used plain oat bran. i think next time i'll try some french onion soup instead. i also used linguine noodles because there weren't any whole wheat egg looking noodles. i also added a smidge more worshter....whatever sauce. lol! thanks bunches!

      This is the 3rd recipe I have tried in less than a week, and once again it was excellent. My toddler didn't approve, as she's sick and not eating anything but a BRAT diet. But DH loved it and said we could eat it again. LOL Thanks for all the hard work you put into this site. I love it!

      I made this for lunch Sunday and it was GREAT! I added onions to mine. I was thinking this would make great meatloaf, meatballs, hamburger steaks........the patties were supper moist.

      I don't normally grate it, but thats a good idea!

      Truth be told, I like the powder stuff for certain things but I think the fresh onion would be good in this.

      Thanks for another idea!

      Oh! and I know, I don't use those soups, often. The French onion is a better option if you are freaked out by the ingredients. LOL or you could just thicken beef broth.

      That looks good. I think I'll try that later this week too. Do you ever just grate onion into your mixture instead of using the powdered stuff? I just prefer using fresh stuff. And I'll have to figure out a gravy instead of the can of soup. Have you read that ingredient list? ew!

      I also have salisbury steak on my menu this week. I have several different recipes that I rotate through. I will give yours a try this time and see how they measure up with the husband. He is a "meat" man so I will have to use more beef but I think they look really good.

      I already had the salisbury steak on our dinner list for this week but now I am going to make it with this recipe instead of the french onion soup and see how we like it. This is one of my favorites!!!

      I've told you before how much I love this recipe and I "stole" the recipe for the patties to use when I want to make up some meatballs or low-point beef patties for the freezer. I may have to put this on this week's supper list! Thanks for the reminder of this great recipe.
