    Dried Herb and Yogurt Marinated Pork

    This is what i missed these last few months. Having a stocked kitchen (semi at least) and just whipping something up. I love trying new things. It's such a fun challenging outlet for me. I mean I gotta eat.. why not have fun with it. Right?

    Since I'll eat just about anything the challenge comes when I must take the husband and child into consideration. I know what they like and don't like and I can usually predict the outcome of my experiments.

    This one shocked me.

    Both ate without complaint. No faces. No questions. Just a nice peaceful healthy dinner.

    *sigh of relief*

    My mission is complete. Score one for mommy. 🙂

    Ingredients

    • 1 lbs thin sliced pork chops with all visible fat removed
    • 1 cup (227g) fat free plain yogurt
    • 3 cloves of garlic minced
    • 1 teaspoon onion powder
    • 1 teaspoon garlic powder
    • 1 teaspoon dried parsley
    • ½ teaspoon dried cilantro
    • ½ teaspoon dried thyme
    • ½ teaspoon dried rosemary
    • About 1 and ½ cup chicken broth (separated)
    • 1 tablespoon corn starch (separated)
    • 1 tablespoon worcestershire sauce
    • nonstick cooking spray

    Instructions

    Mix the yogurt, garlic, onion powder, garlic powder, parsley, cilantro, thyme, and rosemary. Coat the pork chops with the yogurt mixture and marinate for at least 30 minutes.

    Heat a large skillet over medium high heat and spray with nonstick cooking spray. Remove the pork chops from the marinade reserving the yogurt mixture. cook the pork chops about 3-4 minutes a side.

    While the pork is cooking. Whisk the remaining yogurt mixture with 1 cup chicken broth, ½ teaspoon corn starch and the worcester sauce.

    Remove the pork from the skillet and add the yogurt/broth mixture. Bring to a boil allowing to thicken. If it's not thickening enough mix the remaining ½ cup broth with the corn starch and add to the skillet. Once thickened add the pork back in and lower to a simmer until ready to serve.

    We smothered some whole wheat egg noodles with the thicken yogurt/broth mixture and add a bunch of broccoli. It was a perfect meal and I made myself quite a good looking lunch for tomorrow.

    I've been trying to calculate the nutritional information all night but my internet connection is not cooperating. I barely got this to post. 🙁

      This was tonight's meal and I was surprised that the only thing that my princesses fought me on was the broccoli. Thanks again!

      Oh by the way, added mushrooms to the gravy, it was gooood.

      Anne - This happens to me now and then too. Depends on the yogurt and the temp. You could try a lower temp. I also keep stirring. Did thickening not help? Adding the corn starch tends to keep it together a bit. Sorry you had trouble I probably should have warned you in the recipe that it could happen.

      Hi Roni --

      Have lurked on your sites for a year or so and love them all! Question: I made this, and the yogurt separated in the skillet. I used Greek yogurt, b/c it's all I had. Is that what was wrong? Or was the skillet too hot? Thanks!

      Made this for dinner last night, I loved it! The sauce is perfect for rice or pasta. I used penne and it soaked it up perfectly! This is definately going in the Keeper pile. 🙂 Thank you!

      Were they loin chops? I find them to be the most tender. You can also pound and pierce a bit that may help. I find pork hit or miss on the tender department. Hope that helps a little.

      I made this tonight as part of my boyfriend's birthday dinner! It was pretty good. Question though - I bought thin-cut pork chops at Giant, and cooked them exactly how you suggested above, but they were slightly tough. Is there a way to combat that?

      Looks great, Roni! I was wondering if there is was a way you could make your recipes "Printer friendly" I always cut and paste and it works well but it would be nice to be able to print them straight from your site... one page, one picture and all the goodness! 🙂
