Can you say… CRA-AAVING!
I wanted a baked good but I didn't wanted to bake. I know, such problems I have. This is why I have a stash of VitaMuffin Mixes on hand. They are quick, tasty, and compared to most mixes a bargain in the calorie/fat department.
However, you know me by now. I can't make them as is. There has to be some doctoring. This time I added blueberries and some cinnamon to make a twist on a sweet corn muffin.
The Little Guy LOVED them. Notice he's not as easy to picture anymore. This was him after school giving me a thumbs up. I had to cut him off after 3.
Here's how I made them….
Ingredients
- 3 egg whites
- 1 ¼ cups water
- 1 package of Golden Corn VitaMuffin Mix
- 1 cup of blueberries
- ½ tablespoon ground cinnamon
Instructions
You can simple follow the instructions on the back of the box adding in the blueberries and cinnamon but I went a little crazy in the picture department so you get lots of details. 🙂
Sometimes I get snap happy. 🙂
Preheat the oven to 375 F.
Whisk the water and egg white together until frothy.
Pour in the VitaMuffin Mix and blend well.
Add the blueberries and cinnamon. Stir in.
Separate the batter between 15 muffin tins that were sprayed with a bit of non-stick cooking spray. Each cup should be about â…” full.
Bake for 23-25 minutes, or until golden brown.

Your pictures only show 12 muffins. do you use a separate pan for the addition 3????

The muffins you just posted looked so good . I have never heard of that mix, Is it like a martha white cornbread mix??? what else could I use in it's place. I really miss a muffin sometimes in the morning with my coffee and this one was low in points plus yaya !!!!!Keep posting I love your website and your recipes you share, Thanks Jacque
