Basil Feta Cucumber Salad

Oh My! I can not believe how many amazing ideas I'm getting from the The First Fabulous Friday Feta Giveaway! Just reading through them is SO inspiring!

I combined a few of the comments to make a light tasty salad this morning. Coming off a weekend of insane fast food indulging this was the perfect light, tasty meal I needed. I love how 6 ingredients can pack so much satisfying flavor. And I absolutely adore the combo of balsamic, feta and basil!

Ingredients

  • 1 slice of red onion chopped (or more to taste)
  • About ⅓ a pint of grape tomatoes halved (totaling ½ cup)
  • About ½ cup fresh basil leaves loosely chopped
  • 1 cup cut cucumber
  • 1 oz crumbled feta cheese (I used the black peppercorn)
  • 1 tablespoon Balsamic Vinegar

Instructions

Cut your red onion. I only used a small slice as I'm not the biggest raw onion fan but I do like the flavor it adds.

Halve the tomatoes

Loosely chop the basil to release some flavor.

Cut cucumber in quarter inch slices and then in half and half again. Once cut I used a cup worth of the quartered cukes.

Place all ingredients in a large bowl.

Let sit for a few minute to allow the flavors to combine and then transfer the salad to a smaller bowl and enjoy!

    This salad is awesome! I made it last night using fresh basil out of my garden!! Defiantly will be making this again. Thanks for the recipe and I got a few more recipes printed out from previous post to try this week. I can't wait!

    I am really looking forward to buying some feta after all these tasty recipe ideas! I bought the most amazing cucumber at the farmer's market - it was huge (over a foot and a half), pale green on the outside like the normal inside color, and deeply wrinkly... with the wrinkles going in the long direction. It was like nothing I've ever tasted - it had all the sweet delicious flavors of a cucumber with none of the bland or bitter. I'm describing it so thoroughly because it was amazing and you've just got to try it if you happen to see one! It would be so good in a mediterranean cucumber, tomato, and feta salad.
