Ingredients
  

  • 1 slice of red onion chopped or more to taste
  • About ⅓ a pint of grape tomatoes halved totaling ½ cup
  • About ½ cup fresh basil leaves loosely chopped
  • 1 cup cut cucumber
  • 1 oz crumbled feta cheese I used the black peppercorn
  • 1 tablespoon Balsamic Vinegar

Instructions
 

  • Cut your red onion. I only used a small slice as I'm not the biggest raw onion fan but I do like the flavor it adds.
    1 slice of red onion chopped
  • Halve the tomatoes
    About ⅓ a pint of grape tomatoes halved
  • Loosely chop the basil to release some flavor.
    About ½ cup fresh basil leaves loosely chopped
  • Cut cucumber in quarter inch slices and then in half and half again. Once cut I used a cup worth of the quartered cukes.
    1 cup cut cucumber
  • Place all ingredients in a large bowl. toss
    1 oz crumbled feta cheese, 1 tablespoon Balsamic Vinegar
  • Let sit for a few minute to allow the flavors to combine and then transfer the salad to a smaller bowl and enjoy!
