This is the quickest easiest marinade for chicken I’ve every come up with. Both the husband and the toddler normally ask for seconds!
I prefer to grill the chicken on the BBQ but in the winter, I use the George Forman. Ether way it’s a quick dinner!
Ingredients
- 16 oz of chicken breast (only white meat) cut into tender style pieces or chicken tenderloins
- 2 tablespoon Balsamic Vinegar
- 1 tablespoon spicy Dijon mustard
- 1 teaspoon dried parsley flakes
Instructions
Mix the vinegar, mustard and parsley in a small bowl.
Place the chicken in a ziplock bag, pour in the marinade. Seal and let sit for at least 10 minutes.
Grill the chicken for 4-5 minutes a side.
Serve!
Can’t get any easier then that!
Normally I serve with grilled veggies. Tonight I made the perfect side, Roasted Balsamic Cauliflower!

We tried this recipe tonight and it was so good and moist too. I had to cook in the oven at 400 for 30 min because it started rain. I dont think i have tried any of your ideas that I haven't liked. My four year old son loves watching your video post as well. Thanks for inspiring us and our children.

Made this last night for dinner - yum!
I had mine on top a salad made out of mixed greens w/dried cranberries, goat cheese, candied pecans and balsamic dressing.

Hi Tanya!
So NOT a dumb question! It took me awhile to find the tenders. In the meat department there are actually boneless breast tenders and they are labels as tenders. There are also tender "cuts" where they just cut chicken breasts into shapes. Now, you are going to pay more for them because of this. You could take the cheap way out ( I do this all the time) and buy regular breasts and then just cut them into to tender looking pieces.

And you aren't a lost cause! If you did ASK, then I'd wonder. ;~) LOL

Hi Roni!
This may seem a little dumb as far as questions go but...I am having a hard time finding chicken tenders. I have looked and looked and can't quite figure out how you have made them this way. I know what chicken breasts are in the traditional sense I guess but are these peices you use labelled as tenders?
I am sorry. I just know my kids and my husband would love them much more than the usual chicken breast we usually have. They just choke them down to please me!
If you can help this lost cause in any way, I would really appreciate it!
Take care Roni!
Thanks,
Tanya

We love this recipe too! It has become a Monday night staple before weigh in. We eat it over a salad filled with lots of veggies! Thank you...I never would have thought of this combination.

I would do the points but I don't think I'm "allowed" to. I've been advertising and don't want the weight watcher police to shut me down.
Jessica
Roni, I wanted to tell you how I love your little nutrition table at the bottom. Do you do weight watchers or something else? If so I thought it would be nice to have the point value listed as well... I'm screen hopping to figure it out! Which is okay just a sugestion 😉
