Banana Blueberry ‚€œPudding”

Posted by 5 years ago 9 Comments

Did you know one-fifth of a medium avocado, or a one-ounce serving, has 50 calories and contributes nearly 20 vitamins and minerals, including 4% of the recommended Daily Value (DV) for vitamin E, 4% vitamin C, 8% folate, 8% fiber, 2% iron, 4% potassium, with 81 micrograms of lutein and 19 micrograms of beta-carotene (According to avocado.org).

Did you also know blended avocado makes a wonderful pudding consistency. Really, it does! Check out my Chocolate Pudding experiment. That picture doesn’t lie. When whipped and mixed with sweet ingredients the avocado creates an icing texture and it is amazing! Why not take advantage of this for baby? May I introduce Banana Blueberry “Pudding” made with avocado. You’ve got to try this one‚€¶

Start with half a banana.
You can always add more based on taste but I found 1/2 is perfect.

Frozen Blueberries.
You can use fresh but they are out of season for me. The frozen wild ones are tiny and defrost quickly. I like to keep them in the freezer for my morning cereal.

Use the half without the seed.

Baby Food: Banana Blueberry ‚€œPudding‚€ 03

Store the other half.
Leave the seed in the other side and store in a baggie with as much air sucked out as possible.

Add the avocado.
Just scoop out of the skin and add it to the blender.

You may need to add a splash of water but try to work it with as little as possible. Once the avocado and banana blend a little it should catch. Just keep stopping and working the ingredients towards the blades.

Look how smooth!
It does take a little work but once you get it, the texture can’t be beat!

We’re Ready!
Is Baby?

Once I got his attention that is. :)

Baby Food: Banana Blueberry ‚€œPudding‚€ 09

Does he like it?
‘Cause baby’s don’t lie!

Baby Food: Banana Blueberry ‚€œPudding‚€ 10

He’s thinking about it.

Baby Food: Banana Blueberry ‚€œPudding‚€ 11

Distracted by Daddy
But he kept eating!

Baby Food: Banana Blueberry ‚€œPudding‚€ 12

And eating!
He finished the whole bowl!

Baby Food: Banana Blueberry ‚€œPudding‚€ 14

Time to play!
I mean, he’s already a mess. Why not?!

Baby Food: Banana Blueberry ‚€œPudding‚€ 15

It’s good practice.

Baby Food: Banana Blueberry ‚€œPudding‚€ 15

He needs.

Baby Food: Banana Blueberry ‚€œPudding‚€ 15

He’ll get it!
I know he will.

Baby Food: Banana Blueberry ‚€œPudding‚€ 15

Time to wash it down.
A little formula in a sippy cup.

Baby Food: Banana Blueberry ‚€œPudding‚€ 15

Another happy full baby.
Just the way I like it. :)

Your little guy is so darn cute. It makes me smile to see his little cute face and it is so wonderful to see a momma who is feeding him fresh, nutritious foods. He will benefit so much from your investment of time with him.

Love this... and LOVE the photos. That's one happy baby! Thanks for sharing. I just stumbled onto your site and blog and have been making your recipes all week. SUCH a hit with my kids. In fact, I've been able to "fool" them daily and am having great success getting them to enjoy delicious foods that aren't quite so sweet and are packed with nutrients. Thank you!! You are helping me with my new year goals for family nutrition!! :) Cheers from Atlanta!

hi roni, what type of blender do you use? is it a bullet? i have been thinking of getting one.. i am making this for my daughter this week... can't wait for her to try it..

Cassie - What i use the most is my bullet.. (make almost all my baby food in it.) Magic Bullet Express 17-Piece High-Speed Blender Mixing System I also have.. Cuisinart BFP-10CH PowerBlend Duet Blender and Food Processor, Chrome and Black It's ok, not my favorite. Better food processor in my opinion. and... Oster Fusion Blender - BRLY07B GREAT smoothie maker! they also have an attachment you can buy specific for smoothies but I rarely use it. Hope that helps!

This looks yummy. I have 2 special needs kids and one of them is working on eating soft foods. I know she loves bananas and blue berries are also on the ok list. I love this site and even though my babies are more like preschoolers, your baby food adeventures are winners at our house. Thanks so much for taking the time to write about this.

Did you use the whole bag of blueberries?

    September 18, 2012

No, just a handful or 2, maybe about 1/3 of a cup.
