Lemon Thyme Grilled Zucchini Portobello

I bought a package of Portobello in hopes that it would inspire me. I’ve been falling into a cooking rut lately. Managing a household with an infant, a 1st grader, and a man child is wearing me down to say the least.

Tonight I sought some refuge in the kitchen.

Correction… on the grill.

I made the boys burgers and had fun with my Portobello mushroom. The only thing I did wrong… making one.

Lemon Thyme Grilled Zucchini Portobello It came out fantastic! "Meaty" and flavorful and totally hit the spot.

Here’s what I did…

  • 1 large Portobello mushroom
  • 6 slices of zucchini
  • A few rings of sweet green chile (bell pepper would work)
  • 1 tsp olive oil
  • juice of 1/2 lemon (about 1 tbsp)
  • 1/2 tsp dried thyme
  • pinch of kosher salt and Black Pepper
  • 1/2 ounce of munster cheese

Clean and prepare the the mushroom, zucchini, and pepper.

Whisk the oil, lemon juice, thyme, salt and pepper to make the marinade.

Toss all the veggies into the marinade.

Grill everything over a medium flame, turning the zucchini once.

After about 10 minutes flip the mushroom. Pour any remaining marinade into the cap and then layer the grilled zucchini and peppers on top.

Top with the cheese cook for another minute or two to melt.

    you need a grill basket so your food won’t fall through. that happens to me all the time. Check out qvc

    You have inspired me to try portabello mushrooms and the sandwich thins. This looks wonderful. I also have to say that your early recipe for spaghetti squash is a fall favorite. Thanks so much for trying new things and showing them on your blog!

    I made this for lunch today and it is sooooo good!! I used poblano peppers instead though. Thanks for another amazing recipe Roni!!!

    Sooo good is the theme here.

    Instead of green or sweet chilies, i used banana peppers and laughing cow cheese.
    Slid it all on a sandwich thin.
