Tuna Salad Caprese Style

Yesterday was my first day home since traveling to San Diego for the BlogHer conference. My body was craving good healthy food something fierce! So I started my day with a nice omelet and then made this quick tuna salad, partially because a few grape tomatoes and The Laughing Cow Cheese was all I had on hand. Then, once I caught a glimpse of my basil plant on the deck, the idea hit me.

Why not put all the fun flavors of mozzarella caprese in a quick tuna salad? Tuna Salad Caprese Style

It was TASTY! Such a fun twist! The husband stuck with plain old tuna mixed with mayo to which I say… “Boooooring!”

Place all the ingredients in a bowl and mix well!

My favorite type of recipe… one bowl and no mess! :) I put my batch on a sandwich thin and added some carrot sticks on the side. It was a fabulous lunch!

    That is a great idea for jazzing up the tuna sandwich. I just found mini WW sandwich thins, and they were on sale. They will be perfect for school lunches, so I bought two bags and popped them in the freezer.

    I found a great new idea for Tuna that I have been loving (in fact I just had it for lunch today). Mix one can of tuna with 1/2 cup of salsa. I used to only eat Tuna with Mayo, but with this mix I don’t miss it at all!

    For mine I mix tuna with: olive oil, lemon juice, heaping spoon of grainy dijon, spoonful of relish, finely diced onion and finely diced celery….so yummy!!
