*sigh* I’m not going to bore you with my whining. Let me get to this new tasty sandwich I made today!
I needed something quick but I didn’t want to sacrifice taste, or better yet, satisfaction. I don’t know about you but when I just grab something out of the pantry, like a granola bar or some crackers, I’m just not SATISFIED even though I’m no longer hungry.
The funny thing is, this salad is probably lighter then anything I would grab fast. But the fact that I pause, cut a few veggies, make the sandwich, add a side of carrot sticks and sit down at the table to eat it makes all the difference.
Here’s how I did it. This took all of about 3 minutes.
- 1 3oz can of light tuna drained
- 1 wedge of The Laughing Cow Light any flavor — I used French Onion
- About 1/4 cup red pepper chopped small
- About 1/4 cup cucumber chopped small
- pinch of salt, black pepper and dried thyme
Prepare all the ingredients.
Mix The Laughing Cow Light wedge with the tuna.
Add the pepper, cucumber, salt, pepper, and they. Mix well to combine.
That’s it! Pile on your favorite whole grain bread. Top your favorite garden salad. Or do what I did and stuff your favorite pita!
