    The Simplest, Lightest, Easiest Tuna Salad Ever!

    Ohh how I miss my kitchen! I've been so preoccupied with the conference and the baby I barely have time to eat let alone experiment. You could probably tell by my lack of new ideas recently.

    *sigh* I'm not going to bore you with my whining. Let me get to this new tasty sandwich I made today!

    I needed something quick but I didn't want to sacrifice taste, or better yet, satisfaction. I don't know about you but when I just grab something out of the pantry, like a granola bar or some crackers, I'm just not SATISFIED even though I'm no longer hungry.

    The funny thing is, this salad is probably lighter then anything I would grab fast. But the fact that I pause, cut a few veggies, make the sandwich, add a side of carrot sticks and sit down at the table to eat it makes all the difference.

    Here's how I did it. This took all of about 3 minutes.

    Ingredients

    • 1 3oz can of light tuna drained
    • 1 wedge of The Laughing Cow Light any flavor -- I used French Onion
    • About ¼ cup red pepper chopped small
    • About ¼ cup cucumber chopped small
    • pinch of salt, black pepper and dried thyme

    Instructions

    Prepare all the ingredients.

    Mix The Laughing Cow Light wedge with the tuna.

    Add the pepper, cucumber, salt, pepper, and they. Mix well to combine.

    That's it! Pile on your favorite whole grain bread. Top your favorite garden salad. Or do what I did and stuff your favorite pita!

      Amazing! I have been searching for a new lunch idea and this recipe is perfect. I ended up adding scallions to the mix which gave it a nice spicy bite.

      I love your site and am thinking of making your They Don't Know What's In There Pizza Sauce tonight. My 6 year old is pretty good with veggies but my 18 month old is in the throwing everything that looks remotely healthy on the floor stage. Do you ever use it with pasta? If so, do you just not blend it as much to keep it a little thicker?

      I made this today and instead of putting in a pita or on bread I mixed in 1/2C cold brown rice, it gave great texture and I was able to eat it right out of the bowl. Thanks for all the amazing recipes! I am not on WW, bur your recipes and stories are inspiring!

      Wow Roni! This one looks amazing! I am stopping at the store tonight because we are out of tuna haha. I would have never thought to mix the Laughing Cow with tuna like that. Also a GREAT BIG thank you for creating these recipes, sharing the photos to make it easy to recreate, and providing the nutritional info. I am doing Weight Watchers (new) so this makes it sooo easy to do a low points dinner and not have to guess a the points.

      I also hate everything about mayo so I'm thrilled about this recipe! I made it for my very picky husband and used pickle and red bell pepper. He loved it! I can't wait to try it with chicken for myself. I think I'll use some LC lite creamy swiss. 🙂 Thank you, Roni!

      No, I just squished it with the bottom of the spoon. I find once you get that one good squish it gets easier.

      Tried this recipe - really delicious but I did find the laughing cow cheese a little hard to mix. Do you soften it in the microwave a little bit before adding?

      OK Roni, I have to confess. I almost skipped reading this post. I *do not* like "salads" (ham, potato, macaroni, etc.) because I don't like mayo. So I thought..."eh, what's the point?" But, then I remembered that Roni is a crafty one...and comes up with some very unconventional and delicious recipes! To my UTTER delight and surprise, this tuna salad has NO MAYO!!!!!

      Bravo, Roni. You've discovered a way to make a healthy "salad" mix, and one that mayo-haters like me will enjoy! Can't believe I'm saying this, but, Can't wait to try it!!! 🙂

      I haven't been eating tuna salad because I didn't want to use mayo, but now I can use my new obsession -- laughing cow cheese?....genius!!
      I have been losing weight but oh so slowly, so my ww pal and I have challenged each other to cut way down on bread, which we think may be slowing us down. I will have this tuna salad on one slice of bread : D Or hey, about a lettuce wrap? Yummy!!
