Ham and Sweet Potato Skillet

I did it! I cooked dinner! I can’t believe it! :) It’s been forever and I’m happy to report my return to the kitchen was (sort of) welcomed by both the husband and the child. Actually the child DEVOURED his plate. The husband, picked, ate a bit, said it was "good". Then I told him there was sweet potatoes in it and he made a face. You gotta love when the Dad is pickier then the kid. ;)
So I’ve used this flavor combination a few times before. First in Baked Ham with Sweet Potatoes and Carrots and then on the grill with Grilled Ham Steaks with Sweet Potatoes but I have to admit, this way may be my favorite. It literally took 25 minutes from start to finish, was eaten by all and now I have lunch for Monday. How can you beat that? :)
- 12 oz cured ham cut into cubes
- 1 really large sweet potato cut into cubes (mine was 500g)
- 6 oz carrots cut into chunks (170g)
- 1 tbsp apple cider vinegar
- 1 tbsp Balsamic vinegar
- 1 tbsp (21g) honey
- 1 tbsp (20g) molasses
- ¼ tsp all spice
Heat a large skillet over medium-high heat. Spray with non-stick cooking spray and add the cubed potatoes. Cook for about 5 minutes stirring occasionally. Add the carrots and cook for a few more minutes.
Whisk the vinegars, honey, molasses and all spice together. Top the potato and carrots with the mixture. Stir to coat, bring to a boil, cover and lower to medium-low. Cook for about10 minutes. Stir in the cubed ham and cook until potatoes are soft, about 5 more minutes.

I always forget about ham! My family loves it, so I should definitely put it into the rotation more often. Incidentally, I went to the grocery store TWICE today and both times forgot to pick up sweet potatoes. Grrr. The lighting in your apt. kitchen looks like mine…even on the sunniest of days, it looks like I’m shooting in the dark. LOL
WOW! That looks good, I’d (and the 1 year old) would be the only ones eating it because the hubby (just like yours) doesn’t like sweet potatoes…maybe I will have to try it in the fall.. :)

Hey, Roni. This looks really good, I might actually get a couple of people in my house to eat it. Just one question, did you use one of those big ham steaks from the grocery store? Just trying to figure out how to buy ham without buying a big giant one. Silly question, I know, but we usually only eat ham at Easter, lol.
Oh wow – what an awesome idea! sweet potatoes are one of my husbs and thegirl’s FAVE foods. I, on the other hand, am usually like “eh…I’ll try a few bites” but with ham and maybe an apple in there – OMG – yes! great idea, Roni! thanks for sharing!
Deb – You could use a ham steak but I can usually find small 3-4 pound hams at my grocery store. They even have them at Aldi’s real cheap if you have one of those by you. It’s really economical and light (90 cals per 3 oz for a lot of the low fat ones)

Tried this and loved it. I made it with russet potatoes instead because my husband will not eat sweet potatoes. It was still great. I will try it with the sweet potatoes sometime when he is out of town. Thanks for another fast, easy, and delicious recipes Roni!

I made this tonight and it was Yummo! I added: olive oil, red onion, dried sage and some rosemary seasoning and increased the vinegar and allspice. (i forgot the molasses, so i just increased the honey). i thought it was good and filling…. the hubs thought it was “okay”… he’s not a sweet potato fan, but poo on him! ;) thanks for all your great recipes Roni! xoxo
