Sausage & Pepper Skewers

This idea hit me across the face about 45 minutes before dinner. I opened the fridge and saw peppers. Before I knew it I had a package of sausage in the microwave defrosting!

The husband said it was… you guessed it…  “good”. HOWEVER, he asked for seconds AND he said he would like me to make it again! So that’s a good sign. :~P Even the toddler gobbled up a whole skewer! Sausage & Pepper Skewers

  • 1 tsp olive oil
  • 1 tsp white vinegar
  • 1 tsp Italian seasoning
  • 1 large green bell pepper cut into large chunks
  • 1 large red pepper cut into large chunks
  • 2 thick slices of a large sweet onion cut into large chunks
  • 20oz (6) Italian turkey sausage links (I used Shady Brook Farms Hot) partially defrosted
  • 8 skewers sticks
  • non-stick cooking spray (for grill)

Preheat the grill.

Put the olive oil, vinegar and Italian seasoning in a large bowl. Add the pepper and onion chunks. Toss in the oil mixture to coat.

Cut each sausage links into 4-5 chunks. If you keep the sausage slightly frozen this process is much easier. Simple defrost frozen sausage for a few minutes in the microwave.

Toss the sausage chunks into with the pepper and onions

Skewer the sausage with the pepper and onion, alternating the three ingredients. I shot for 4 pieces of sausage per skewer.

Makes 8 skewers and I had enough veggies left over for a veggie one.

Lower the grill to medium cook for 20-25 minutes turning frequently.

I served on a bed of instant whole grain flavored rice.

    That looks great! And here I thought sausage … even turkey sausage … was a no-no. I’m going to rethink that thought and try this one out!

    I saw this recipe on your site yesterday so I made it for dinner last night and my husband loved it. He even said, “I would eat this again”. My 1.5 year old also ate it – great idea, thanks!!

    Hey Roni,

    I did this the other day, and actually used chicken as well as regular sausage, couldn’t find turkey! I marinaded in light italian dressing, and served over brown rice. Yummy! Thanks for the great ideas!!

    OMG! Made these and they were AMAZING! My husband loved them and that is a first!!!! The three kids were asking for bites – I figured they wouldn’t like them. They loved them too!
    I took the left over two for lunch the next day. AMAZING!!!!

    I just wanted to let you know that I made these for my husband to take to work. I just prepped everything and put them on the skewers and he cooked them at work.

    My husband is a firefighter, and that day all the guys at his station made a huge meal of everything that they all brought. Well, the consensus was that the skewers kicked %#*$&%!! LOL All of them LOVED this dish!

    Unfortunately, I never even got to try them. Sigh… I guess this means we’ll just have to make them again! :)
