Spicy Black Beans and Zucchini

I LOVE taco night, it’s one of my all time favorites. However, I never know what to make for a side dish. I mean beans are good but they are a little bland all by themselves.

So with my spice cabinet and a leftover zucchini in hand I whipped this up. You could use it as a side dish, as the taco “meat”, or my favorite, filling for a quesadilla. I’ve made 2 since Friday with the leftovers! Spicy Black Beans and Zucchini

  • Thick slice of sweet onion diced
  • Small zucchini diced
  • Salt & Pepper
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp curry powder
  • 1 can of black beans drained and rinsed
  • 2 tbsp salsa
  • Non-stick cooking spray

Spray an medium pot with non-stick cooking spray and warm over medium heat. Add the onion and cook for a few minutes until they start to soften.

Add the zucchini and sprinkle with salt & pepper. Cook for a few minutes then spinkle with the spices. Stir in the beans and salsa.

Lower the heat and stir occasional until ready to serve.

    I love black beans! This sounds delicous ~ I’ll have to keep this in mind for a future meal.

    I made this for lunch yesterday and had it in a quesadilla. It was excellent. I have some leftover and I thought I would add a little more salsa and have it over rice today. If you have not tried this - you should. It is excellent!

    I made this recipe and let me say it completely rocked. I put it in a weight watchers pita. Let me saw it was delicious and filling! A real ten in my book:0)

    This recipe is awesome. Really quick and easy and very delicious. I had it in a low carb wheat wrap with a touch of ff sour cream. I can’t wait to eat more for dinner tonight.

    I made this last week to have with fajitas. I really liked it. My family didn’t even try it(they are bad). I had it as a side that night and then a few days later I made one of your quesadillas. Tonight I am going to mix it with a little spaghetti squash. I think if I make it again I will leave out the curry.

    Holy cow! So good. I am on the Core Program and this fits in perfectly. I spent the points on tortillas and made quesadillas. With some fat free cheese and fat free sour cream it is a great 2-3 points.
