Stupendous Stromboli

I LOVE STROMBOLI!
There I said it. It may be the number one reason I gained about 50lbs in college. It’s like a stuffed pizza and you’ll know about my pizza problem by now. ;~)
I thought I’d share how I get to have my Stromboli and eat it too. Let’s face it, a life without pizza and Stromboli is just not worth it!
Anyway, it’s possible to make a healthier weight conscious version that, frankly, I like better then those fat filled college binges I used to splurge on.
The first thing you need is to start with good whole wheat pizza dough. I’m working on a homemade recipe but in the mean time my favorite is Trader Joe’s refrigerated dough. It is 120 calories, 2g of fat and 4g of fiber per serving (2 oz) and there are 8 servings in the package. So I portion out the dough in 4 oz servings and make individual pizzas, Stromboli, calzones, whatever. 
Here’s what I did yesterday for a fabulous family lunch!
- 4 oz whole wheat pizza dough rolled in a thin oval
- 1 oz shredded mozzarella cheese (part skim)
- 1/8 diced green peppers
- 1/8 cup diced red peppers
- 1/8 cup diced zucchini
- Large handful baby spinach loosely chopped
- Leftover sauce for dipping (or your favorite jarred stuff)
Preheat oven to 425 degrees.
Prepare the the fillings by dicing up all the veggies (notice the toddler stealing my peppers!)


Measure out 4 oz of the pizza dough and roll it out. Sprinkle a bit of the cheese on the one side. Place the peppers, zucchini and spinach and top with the remaining cheese.
Fold over the dough to make a pouch and seal the ends. Pierce the top with a knife to let the air escape.


Bake for about 10-15 minutes on a pizza stone (or a cookie sheet sprayed with non-stick spray) until the dough is firm to the touch.
This technique makes a 1 serving Stromboli, nutritional information below.

I also used the portioned out dough to make the husband a calzone and the toddler a mini pizza. It really was a fabulous lunch! Everyone was completely happy and I didn’t overeat!!! (as I would have with a whole pizza, or if went out to eat Italian)

YUM!!!
Years ago, I stumbled on a WW version of a stromboli recipe and I LOVE it! This one is very similar except mine used Turkey Pepperoni in it and oh my–YUM!!! I’m definitely going to be trying this recipe!
OMG, this looks so good! I don’t have a Trader Joe’s near me. I wish I knew where to get whole wheat pizza dough.
wow, I’ve never actually tried Stromboli before, but your recipe is inspiring me to try one at home, and I generally shop from TJ’s too, so this one is a must try!:)

OMG! I just made this and I thought I died and went to heaven! I am full and feel satisfied. I too have a “pizza problem” and this is a great way to satisfy it! Thanks Roni! I absolutely love the recipe idea for Stromboli and can’t wait to try it this week. I have a huge weakness for pasta and pizza type foods. I just saw it while looking at your Spinach Ricotta roll, which also looks inspired. I can’t wait to try that one as well!
When you crimped the stromboli closed did you use water or just pinch it?
