When I was a kid, every day I’d come home from school and make a snack. Nine times out of ten that snack was some form of pizza! Some of Mom’s leftover sauce, a mound of cheese and an English Muffin was all I needed for some after school comfort.
Now after my long days at work, especially if I come home way after dinner time this is my go to lite snack before bed. It only takes but 5 minutes and for some reason they still comfort me after a busy day.
- Whole Grain or Lite English Muffin
- 4 thin slices of a large tomato
- 1 oz shredded mozzarella cheese
- Garlic powder
- Oregano
- Salt & Pepper
- Any veggie topping you like, I used broccoli and green peppers.
Preheat oven or toaster oven to 425 degrees.
Toast the muffin.
Measure out the mozzarella cheese and slice the tomato. Add a little sprinkle of the cheese on each toasted muffin (will help the tomatoes stick). Place a slice of tomato on each and sprinkle with all the spices. Add bit more of the cheese to help the next tomato slices stick. Add the next tomato slices, sprinkle with spices, top with any veggie toppings and remaining cheese.
Bake for a few minutes until cheese melts.

Can you use whole wheat/ grain bread?
For right now I ran out of tortilla, english muffins, etc.
Bread doesn’t normally hold up to sauce but it may work with tomato slices. Try it and let us know!
