
I told you I was obsessed with watermelon, right? I can’t get enough and thankfully, it’s one of the few fruits both kids love.
The idea hit me to use some in a smoothie one morning when I wasn’t really hungry yet very parched after a sweaty summer workout. I just wanted something really refreshing.
Chia seeds have become my second go-to item for breakfast when I’m not in the mood for eggs. They are fun, versatile and easy to prepare or add to foods for a nutritional boost. I’m starting to see them more readily available, too.
Anyway, this smoothie totally hit the spot this morning. It’s light yet filling, and the texture isn’t as “slimy” as some other chia-based drinks I’ve tried in the past because I don't soak them first.
Here’s what I did...
Ingredients
- 200g cubed watermelon
- 1 tablespoon chia seeds (12g)
- 1 teaspoon lime juice
- 1 teaspoon honey (5g)
- Pinch of kosher salt
- 10 ice cubes
Instructions
Put the watermelon, chia seeds, lime juice, honey and salt in the blender.
Process for a few seconds until smooth.
Now that you have a liquid base, add the ice cubes and blend again until smooth.

I've been using lots of chia seeds lately, they're totally my new thing! It's replaced flax seeds in my diet. I guess that's where the protein comes from in your nutritional info? I wonder if I could put even more chia seeds and use it as a post-workout drink.
