    Two Cheese Tuna Melt Wrap

    I've never had a tuna melt. Is that weird?

    I guess that's what happens when you grow up not liking mayonnaise. I never ate tuna salad or egg salad or chicken salad. Honestly, they always kind of grossed me out.

    Then I realized.. hey.. why does tuna salad have to be made with mayo?

    I made these wraps yesterday out of pure desperation. I was hungry and wanted something warm but I had nothing in the fridge. That's what happens when you go away from the weekend and don't get to the grocery store.

    So I hit the pantry and pulled out a can of tuna. With no mayo (I have learned to like it a little now) and no yogurt, I turned to The Laughing Cow. All I had was a wedge of Smooth Sensations Cream Cheese Spread Garden Vegetable...

    and a Mini Babybel Light.

    "Hmmm cheese and tuna," I thought, "Don't people eat Tuna Melts? That could work!"

    And worked it did! 🙂

    I ended up with 2 small delicious wraps! Side note: It would have been 1 big one but I only had small tortillas. I REALLY do need to hit the grocery store.

    Here's what I did…

    Ingredients

    • 1 5oz can of Light Tuna drained well
    • 5 grape tomatoes diced
    • 1 sweet gherkin (pickle) diced
    • 1 wedge of The Laughing Cow Smooth Sensations Cream Cheese Spread Garden Vegetable â…“ Less Fat
    • Pinch of Kosher Salt and Pepper
    • 1 Mini Babybel Light grated
    • 2 small or 1 large wrap

    Instructions

    Preheat the broiler.

    Put the tuna, tomatoes, pickle and the Garden Vegetable Wedge a bowl.

    Combine.

    Now, I almost stopped right there and just put the on a slice of toast but I wanted to try this Tuna Melt idea. So I put the tuna salad on a wrap and topped with the grated minibabybel.

    Again, I used 2 small wraps but you could use 1 big one as well.

    Put the wrap(s) under the broiler just long enough to melt the cheese but not crisp the wrap. I did exactly 2 minutes and the edges of the wrap were just starting to curl.

    Roll like a burrito and enjoy with some grape tomatoes and pickles on the side!

    I'm going to give you the nutritional information just for the tuna salad and cheese minus the wrap. This way you can add in your specific wraps calories and such.

      i made this using what i had on hand -- roasted red peppers & relish and toasted it on a sandwich thin. wow, so good!! and i love that it only takes maybe 5 minutes from start to finish. thank you for this recipe! 🙂

      Made this twice and love it. Made it with red peppers instead of tomatoes the second time and I think I liked that version better.

      To note, I got the WW laughing cow rip off because it was on sale and it does not compare to the orignal. The texture is off and the taste is too, will be sticking wiht laughing cow only.

      I've been weary of these new flavors and so far just have eaten the light swiss, but will get the courage up one day!

      Wow Roni! These look amazing! I'm always at a loss what to do with tuna because I don't like mayo either and I find that bread dries out the tuna with yogurt. I'm going to try making these over the weekend. Thank you 🙂

      It is and a little from the tomato. You can omit or sub anything you like! Diced onion, peppers, cucumbers, even just of your favorite herbs. It's would all work!

      Roni,
      Is the sugar from the gerkin? Just curious where the sugar comes from. I'm doing the Medi Weighloss plan and it's a cross between Atkins and South Beach. I was referred to it by my cardiologist. Anyways, I'm just curious so I could know what to substitute or omit.
      Also, thank you for introducing me to the Laughing Cow. I saw your burger idea with the garden veggie and I bought some. It's so good. I'll have to try the chipotle as well.

      I love this! Ever since I started following your blog I only use laughing cow for my salads (tuna, chicken, etc), I just made something the other night with chopped chicken, Chipotle Queso laughing cow, smashed avocado, onion salt and pepper. YUM!
