
It's going to sound strange, but I actually made this salad for breakfast yesterday. I just happened to spy the zucchini and strawberries in the fridge and the idea hit me.
Actually, that's only partially true. At first I envisioned a light zucchini and strawberry salad, then the tuna idea came when I started to brainstorm protein options.
The result was a super fun summer salad that was perfect all by itself. If I had a pita I might have stuffed it, but really, eating it with a fork and a side of carrots was a great meal!
Oh! And the herbs came out of my containers on the deck. If you haven't taken the gardening leap, buy a small pot and grow some basil and mint. It's super easy and so fun adding them to dishes!
Here's what I did…
Ingredients
- 1 medium zucchini, cubed (mine totaled 18og)
- 4-5 fresh strawberries, diced (mine totaled 90g)
- 1 teaspoon olive oil (5g)
- 1 5 oz can of tuna, drained
- 1 teaspoon lemon juice
- 2 tablespoon non-fat Greek yogurt (30g)
- ~10 fresh basil leaves, minced
- ~10 fresh mint leaves, minced
Instructions
Put all the ingredients in a bowl and toss!

You are genius. This is the best tuna salad ever. It just happened I had everything for a change and was looking for something different but easy. Didn't have greek yogurt, don't like it, but did have plain yogurt and put a teaspoon of mayo. Perfect. Love the zucchini and strawberry in it and I think the mint ties it together.

For all your followers who would love to have a garden but don't have the room or time to manage one, I HIGHLY recommend looking into a "Grow Box' (agardenpatch.com). I grew two tomato plants in a box last year - one reg. and one cherry - I got over 1200, yes, 1200 cherry tomatoes from one plant. I also planted some herbs and had them coming out of my ears. I am attempting zucchini, squash, cucumbers and watermelon along with 4 tomato plants and my herbs (I have 4 boxes this year). The only thing you have to do once everything is planted is water them. No weeding, no fertilizing or anything. I don't work for the company, I am just in love with the ease of these boxes - and I LOVE to watch everything grow.

Yum! I made a variatoin on this yesterday, without the herbs, and used apple instead of zucchini, for a nice crunch. Yum and Yum! And especially fun because I hadn't tried it before and just tossed random foods I liked into a bowl and it worked - the joy of a successful edible experiment!
