The Pumpkin Cake - Happy Halloween!

Little Guy and I created a new tradition tonight! A simple pumpkin cake using a store bought cake mix, canned pumpkin and a standard ice cream cone. We got the idea after seeing this. I'll put the directions below the video.

For those who've watched our prior video... Little Guy brings back the tree in his belly! It totally cracked me up!

The Pumpkin Cake - Happy Halloween!

  • 2 boxes of store bought spice cake mix (we used Duncan Hines Cake Mix Moist Deluxe Spice)
  • 2 15oz cans of pumpkin
  • 1 ⅓ cups of water + 1 ⅓ cups of water
  • 1 ice cream wafer cone

Preheat the oven to 350 degrees.

In separate bowls, mix each cake mix with 1 of the cans of pumpkin and 1 and ⅓ cups of water.

Pour each of the mixed batters into their own bundt pans and bake for 45-50 minutes.

Remove from the oven, let cool in the bundt for 5 minutes. Remove from pan and cool completely. Flip one the bundts over and top with the other. Use the cone as the stem and decorate anyway you like.

Note: You can use small bundt and split 1 box of mix between them for a smaller pumpkin.

Rather a loaf then a pumpkin.. Simple Pumpkin Spice Mini-Loaves

For my Weight Watcher Friends... the pumpkin would be 24 servings, 2 points each not including the toppings.

    LOL We (or I should say 'they') would be an icing family if it wasn't for me! I'm just not the biggest fan so I try to keep it at a minimum.

    I'm skeptical of your non-frosting family, but I am sure that the cake definitely looks like a pumpkin! Also, love the spider legs idea - spider cake!!

    Great idea! I make the muffins all the time with spice cake mix, pumpkin and water but never thought of this. Thanks for sharing! Happy Halloween!!

    So cute!!! That sounds really good, too. Last year I made pumpkin spice "blondies" by mixing reduced sugar yellow cake, canned pumpkin, and pumpkin pie spice (and no water! that's it!) all together and baking. Part of me is considering doing it again. 🙂

    HAHAHA!!! This is great! I want to make one hopefully when once I get my teaching certificate I get I lower grade and I can make this for halloween next year for a halloween party

    You are so sweet and patient with the little guy! 🙂 Sometimes I get stressed out watching parents with their kids (can you tell I don't have my own yet?), but you guys always look like you are having so much fun. Love the cake, too!
