
I have no idea how to start this post. It feels like I haven't been in my kitchen for weeks!
This morning was the first day I woke up in my own house after FitBloggin and I just HAD to get creative. I can't explain it, but it's therapeutic for me.
So I opened the fridge too see what I had and the Edible Arrangement the Husband got me to celebrate the end of the conference was staring at my face.
A light fruit based breakfast was exactly what I needed. So I did a quick google search for melon recipes and came across this Thai Melon Salad on NPR that reminded me of a Papaya Salad with Peanut sauce I had in New York a couple of months ago.
They were the inspiration for my version this morning.
You wouldn't think so, but a bit of spice added to sweet melons is a YUMMY combo! Here's what I did and the result was AMAZING. Seriously, delicious.
Ingredients
- ~1 Cup Cubed Watermelon (150g)
- ~1 Cup Cubed Cantaloupe (150g)
- ~1 Cup Cubed Honeydew (150g)
- 2 teaspoon Lime Juice
- 1-2 pinches of ground red pepper (based on taste)
- ½ oz Lightly Salted Peanuts (14g)
- ~15 Fresh Basil Leaves
Instructions
Place everything in a bowl and toss!
I love easy recipes!
You could share this but I made it one nice size serving for breakfast. This was the whole batch…
You could also double, triple, quadruple the recipe for a party or get together.
After 4 days of absolute madness this was a great way to start my day. It felt good to be back in the kitchen juggling Little Bean, cooking, and taking photos. 🙂

Ingredients

This looks Delish. I make a salad with all the melons above, jicama, lime juice, Cilantro, and jalapeno. It is my summer Fave.
