
I go through smoothie phases. I can go months without making one and then all of a sudden I get an itch. Yesterday was an all-of-a-sudden day. I got back from the gym and even though I was hungry I had no desire to eat. Nothing sounded good. Perfect situation for a smoothie experiment!
I happen to have lots of frozen strawberries from my CSA so I decided to use them for inspiration but I wanted to have some fun. Don't get me wrong, a plain old strawberry smoothie is yummy but I wanted something a bit more substantial and, well, different. I like different.
That's when I came up with the idea for a Strawberry Shortcake Smoothie. I decided on using cashews to add a little more body and up the calories since this was meant as a meal replacement.
You'll see I added some lemon extract as well and it may seem weird but a small dash really helps give it a "cakey" taste. Too much will backfire so be conservative.
As you'll see, the ingredients are pretty simple. The honey is optional especially if you use a sweetened milk. I found I needed just a touch because my strawberries weren't sweet enough for my taste.
Here's what I did…
Ingredients
- ¼ cup cashews (28g)
- 1 cup unsweetened almond milk (8oz)
- ¼ teaspoon lemon extract
- 1 cup frozen strawberries (140g)
- ½ tablespoon honey (10g)
Instructions
Blend the cashews, almond milk and lemon extract until smooth.
Add the frozen strawberries, blend until smooth.
Taste for sweetness and then add the honey if needed.

Any ideas on substitutions for the cashews? They are my one allergy, but a very nasty one!

My friend said she uses oatmeal to give ruer smoothies body. That may work!
