I love when people share great ideas! Yesterday Maria shared this Cheesecake Stuffed Strawberry post from from The Girl Who Ate Everything.
A seed was planted.
Today I decided to take a super simple approach this idea. I'm talking 3 ingredient simple...
and the results were delicious!
This is such a fun way to kick up your snack a notch, making it that much more satisfying. Oh and did I mention SUPER light. This whole batch is only about 80 calories…
...and takes all of 5 minutes to make.
Here's what I did…
Ingredients
- 5 Strawberries
- 1 Wedge of The Laughing Cow Smooth Sensations Cream Cheese Spread Cinnamon Cream â…“ Less Fat
- 1 graham cracker
Instructions
Cut the caps off the strawberries and hollow them out with a paring knife.
Some may be hollow inside and others will just have a small hole you can make with the paring knife. Either way it's stuffable. You only need a small cavity.
Place The Laughing Cow wedge in a small sandwich bag and squish it a bit to soften. Then cut the tip of the bag.
Pipe the cheese into the strawberries.
Smash the graham cracker to make crumbs.
Roll the strawberries, cheese side down, into the graham cracker crumbs.
Done!
And done. 🙂

MMM...I am going to try this for date night. This is so much better than the white chocolate filled strawberries that I have been known to make!

I made these this weekend with strawberries and cream laughing cow cheese (I couldn't find the cinnamon spread), and I think they are my new favorite thing! Not only were they utterly delicious, they were fun to make too! I also substituted Annie's Homegrown Gluten Free Snickerdoodle Bunny Cookies for grahm crackers because I couldn't find GF grahm crackers, and it turned out to be a great subtitution! I'm going to make them again this week for the 4th! Thanks again for the idea!

IF you can't find it try mixing in a little honey and cinnamon to a traditional Laughing Cow Wedge like I did here.. https://greenlitebites.com/2011/07/24/cheesy-blueberry-topped-english-muffins/
That would be good stuffed in a strawberry too! 🙂
