I am continuing my soup obsession with this Simple Sweet Potato Soup.

Simple Sweet Potato Soup

I have so much turkey broth from Christmas that I'm using it as inspiration. Plus, it's the last day of break. So, I decided to have a little fun in the kitchen before I head back to work.

Our house is still in holiday-leftover mode. The fridge is packed with turkey, stuffed shells, and enough homemade stock to drown a horse. I'm freezing the stock in two-cup batches for future use, but now that I have quart-sized mason jars, I like keeping some fresh and on hand.

This soup really is simple but surprisingly tasty. The thyme is all you need to kick it up a notch. First, I had a cup straight up.

But then I thought, protein! So I added some leftover turkey chunks and shredded smoked gouda. They were great additions!

Simple Sweet Potato Soup

Simple Sweet Potato Soup is full of flavor from the caramelized sweet potatoes and thyme. Enjoy straight up or use it as a base for your favorite toppings.

Ingredients

  • 1 tbsp olive oil
  • 1 sweet onion, chopped (200g)
  • 3-4 sweet potatoes, chopped (500g)
  • 1 tsp dried thyme
  • pinch of salt 
  • 4 cups broth

Instructions

Heat a soup pot over medium-high. Add the oil, onion, sweet potatoes, salt, and thyme. Saute until the onion softens, and the sweet potatoes start to carmelize -- about 5 minutes. The bottom of the pan may stick a bit. That's ok.

Add the broth and bring to a soft boil. Then lower to a simmer and continue to cook until the sweet potatoes soften -- about 15 minutes.

Puree everything until smooth.

Enjoy!

Notes

  • I left the skin on the sweet potatoes because I like the texture. You can peel for a smoother soup.
  • Sweet potato sizes vary greatly. Mine were small to medium, weigh out when your chopping, so you know you have about 500 grams.
  • I used homemade turkey stock for this but chicken or veggie broth would work great too!

    Made for dinner tonight. Did not add the turkey because I already froze it. Didn't miss it. Super tasty. I did use my homemade turkey stock, which I think was a bonus. Smoked gouda garnish was a touch of genius. We loved this soup. Yumbilicious!
