My first experiment is a smashing success! You know me and my addiction, if anything even resembles a pizza, I'm game. I thought for sure I'd miss the mozzarella on this but not a chance! This little baby was PACKED with flavor. The sweet tomato paste and peppers with the spices and creamy cheese. I loved it!
I used the Athenos Tomato Basil Feta but you could easily use regular or low fat. I'd maybe sprinkle a little more oregano or basil on top for an extra bit of flavor. I'm sure olives would be good on this too, but I'm not a fan. So I kept it simple with what I had on hand, a jar of roasted peppers and some baby spinach.
I had this for a late breakfast but I think I'll make myself another one for lunch. 🙂
Ingredients
- 1 Whole Grain/Low Carb tortilla
- 2 tablespoon (33g) tomato paste
- Kosher Salt
- Black pepper
- Dried Oregano
- About ½ cup baby spinach leaves
- 2 roasted red peppers
- ¼ cup Athenos Tomato Basil Feta
Instructions
Preheat the oven to 425 Degrees.
Place the tortilla on a piece of aluminum foil abd bake for about 5 minutes until it gets toasted.
Set up your station...
Smear the tomato paste on the toasted tortilla and sprinkle with salt, pepper, garlic powder and dried oregano. Just a pinch or 2 of each.
Top with the spinch leaves.
Lay the 3 slices of roasted red peppers on top.
Add your Feta!
Bake in that pre-heated over for about 5 more minutes until the edges get brown and everything is warmed through.

I actually found some gluten free wraps, and since I tend to be sensitive to gluten (not to the level of celiac disorder, thankfully), I now have a great recipe to try with them, rather than the same old wrap things! Even my husband is looking forward to trying this for a light lunch!

I tried this recipe last night and it was delicious. I didn't include the oregano, but besides that everything was spot on! This is now, by far, my favourite 'quick meal'.

yum! i love personal pizzas at home! i always put spinach on mine (normally hidden underneath cheese for friends who don't eat veggies but I love the idea of roasted red peppers-- never would have thought to try it!! thanks roni! ps-- i'll use whole wheat pita bread whenever i make pizza & they work great 🙂 ... just thought i'd throw in a suggestion!

My husband has something against tortillas. He hates them- so I had to stop making every recipe involving tortillas for dinner haha. But this looks so easy I might want to make it for myself for lunch and he will just be missing out.

Yum! That looks great! I've never tried that with tomato paste. I make a similar pizza, but I use hummus instead of a tomato based sauce. Soooo yummy! I've also used artichoke hearts instead of red peppers, too. Both good.
