    Quick Ramen Noodles Lunch – Take II

    A few months ago I discovered a healthy version of an old college favorite of mine, the RAYmen noodle. I admit it, I still love them. There is just something about the noodle texture and salty flavor. :~)

    Well today was another perfect day to make a quick lunch. I have a sick toddler on my hands, I didn't eat a big breakfast, I was running around like a nut and there just seems to be no food in my house! Then I open to cupboard and saw lunch. Ahhh the noodles! This is why a stocked pantry comes in handy. I whipped this up and could not be happier!

    Ingredients

    • 1 package of Beef flavored Choice Ramen Noodles
    • 1-2 slices of a sweet onion chopped
    • 10 baby carrots diced
    • 4-5 button mushrooms sliced
    • handful of baby spinach leaves
    • non-stick cooking spray

    Instructions

    Prepare the noodles according to package using only 1 ¼ cups of water.

    While waiting for the water to boil, heat a large non-stick skillet over medium high heat and spray with non-stick cooking spray. Add the onion and leave alone for at least 1 minute. You want that nice brownness to start. Stir in carrots and cook while slicing the mushrooms, stirring occasional.

    By this time the water should be boiling, add the noodles and flavor package. Continue to cook for 1-2 minutes. You may have to flip the noodle wad over once as there isn't much water. After a few minutes shut of the heat and continue to cook in the water.

    In the mean time, add the mushrooms to the skillet and cook down. Test the noodles, they should be done with a bit of water remaining. Pour the noodles and fluid into the mushroom-carrot mixture. Cook for about 1 minute breaking the noodles apart, they have a tendency to stick together. Add the handful of spinach. Cook for about 1 more minute until the spinach reduces a bit then serve! (Man – I should record that – it sounds complicated now that I typed it out!)

    It's a HUGE serving but I'm not going to split it up.

    Oh! and I SUPER proud of that picture. I need to start making all my meals in the AM! Good lighting!

      Hey Roni. I just cooked this meal this evening. I am saving it for lunch tomorrow. after a small taste, I was pleased with the result. I just hope it tastes just as well tomorrow. Thanks for the recipe.

      I have made this the past two days in a row! It is soo good. It really is like a veggie lomein! I used a chicken flavor package the second day and it wasn't as good as the beef.

      I did this one today, but I was making it for my husband and I so I used 2 packets of noodles. I only had 2 of the Oriental flavor, so I used those and I added a chicken breast cut into small strips (like stir fry). I just cooked the chicken in my big pan before adding the veggies. It turned out great and my husband loved it! Even my 4 year old liked it!

      Roni - I love these Ramen Choice noodles and like your ideas on extras! My question, though, is why did you give this recipe 7 points when veggies are free and the noodles are worth 5 points?

      Steph- I do use the packet. It does have sodium but I'm not that crazy about it. I don't eat stuff like this all time. But good idea on replacing it with your own sauce!

      Roni - Remember when you said you didn't really like onions? Can you believe you are eating them up in these recipes now? I love onion :o).

      I usually break up my ramen noodles too before I cook them. Boil them, drain ALL the water THEN add the spice package (so I don't dilute any of the sodium) HA!

      A question--you don't use the Beef flavoring packet, or do you? I always heard those have a huge amount of sodium in them, so when I used to eat the noodles I'd make my own sauce with a low-sodium soy or teryaki or something.

      A friend turned me on to using Reman Noodle soup for the base of good WEIGHT WATCHERS LOW point meals.
      I use the shrimp base and use shrimp. YUM YUM!!!!
      Using less water sounds great!!
      Will try.
