
I hate wasting food. I'm not Molly Ms. Perfect but I do normally try to do things like eating leftovers, using bones to make soup, and freezing aging fruit for recipes. I also love this bagged spinach trick and I even have freezer bags of vegetable scraps to use when I make stock.
I have, however, gotten lax on my pineapple core usage. I used to use them for smoothies but frankly, I just got lazy and started throwing them away.
Then it hit me after buying a couple of fresh pineapples last week. I can freeze them, too!
So that's what I started to do and now I have a new pineapple core smoothie recipe I've been enjoying this week. I love the pineapple flavor combined with a touch of coconut and banana. The spinach adds no taste but a wonderful color and lots of vitamins.
Here's what I did...
Ingredients
- 50g (about half) of a frozen pineapple core, sliced thin (if you are using fresh just throw a few ice cubes in the mix)
- 1 ½ tablespoon shredded unsweetened coconut (7g)
- 50g nonfat Greek yogurt (~ ¼ cup)
- ½ ripe banana (56g)
- ½ cup unsweetened coconut milk
- 2 cups baby spinach (56g)
Instructions
Place everything in the blender and blend until smooth!

Great idea to freeze the core! I always laugh when I find a comment of mine on one of your old posts. I was pretty sure I had commented on that pineapple video and sure enough I did!

Love it, simple and tasty! An idea if you ever do make too much smoothie - pour into some ice-pop molds and make popsicles for your kids (or yourself)! My kids will usually eat the popsicle version of a healthy smoothie, even when they "don't like it" in smoothie form. 🙂
