That's right, I said “pizza” and “salad” in the same breath. I have NO idea where this idea came from. I was driving home from the gym the other day imagining what I could make for lunch and "pizza salad" popped in my head. I often get my best ideas in the car, it's weird.
It really should be called “supreme pizza salad” as I purposely put all my favorite pizza toppings in the salad but pepperoni had a better ring to it.
Ingredients
- 1 teaspoon (4g) olive oil
- 1 tablespoon (16g) tomato paste
- ½ tablespoon balsamic vinegar
- 1-2 tablespoon water
- ½ teaspoon garlic powder
- ½ teaspoon dried basil
- Kosher salt & pepper
- About 2 cups your favorite greens (I used baby spinach)
- ⅓ of green bell pepper sliced
- 1 medium mushroom diced
- 3-4 raw broccoli florets
- 6 cherry tomatoes
- 1 oz fancy shredded mozzarella cheese
- ½ oz (30g) turkey pepperoni sliced thin
Instructions
In a small bowl, whisk the olive oil, tomato paste, vinegar, 1 tablespoon of water, garlic powder, dried basil and a pinch of salt & pepper. If you need to thin it out a bit add another tablespoon of water.
Pile the greens, mushrooms, peppers and tomatoes on a large plate. Sprinkle the pepperoni and cheese on top. Drizzle with tomato paste vinaigrette.

Here's a shot of the salad from another perspective. I liked how high off the plate it is. Really, it was a HUGE salad and I loved having all my pizza toppings in raw form for a change.

yum.....I would stick it in a 1 point pita and grill it in my gt express (you know that grill thingy cathy mitchell endorses =D) it gets it crispy and seals the edges =D

My kids get a salad like this at school for lunch sometimes. Theirs has some pasta in it too.

I tried this for lunch today, adding a little onion because that's one of my favorite pizza toppings. Can I just say "yum"? You came up with another winner, Roni. I'm not surprised. I don't think I've tried a recipe of yours that I haven't liked.
