    Pear Turkey Sandwich

    I'm fairly new to the idea off adding fruit to sandwiches. I'm not sure why it's taken me this long to try it, the possibilities are endless and it's such a great way to add lots of flavors with a healthy twist. Not to mention, for my fellow Weight Watcher fans, fruit is now FREE so it's a 0 point addition!

    My first stab at it was my Christmas Inspired Panini where I paired cherries and avocado with ham. This time I'm using my current favorite fruit of the season...

    PEARS! They are everywhere and absolutely wonderful. Every year I forgot how much I like them until I take a bit into a ripe Anjou (the small green ones). Then I fall in love all over again.

    They are gritty and sweet and juicy. Just amazing! Little Man loves them too so I buy a bag of assorted pears once a week and we enjoy trying them all.

    Today I used a ripe Anjou to make the most amazing sandwich.

    Ingredients

    • 1 sandwich thin
    • 1 wedge of The Laughing Cow Light Creamy Swiss
    • Half a cup of baby spinach leaves (15g)
    • ½ of pear sliced
    • 2 oz of deli turkey
    • ½ tablespoon low-sugar jelly

    Instructions

    Here's all you need to make this tasty lunch...

    Toast the thin if you prefer. I only do if mine aren't fresh.

    Smear The Laughing Cow Cheese Wedge on the bottom half of the thin. Top with the spinach and pear.

    I sliced mine from the bottom to make fun round slices but you can slice from the side.

    Top the pear with your sliced turkey and smear the jelly on the top of the thin. Note: This could totally be replaced by some cranberry sauce at Thanksgiving time!!

    Viola

    slice for effect...

    Pair with some carrots stick. Delicious!

      I love combining the Laughing Cow blue cheese flavor with sliced chicken or low-sodium deli turkey, greens, and 1 tablespoon of Trader Joe's cranberry sauce (love it because it comes in a jar, not a can) or low-sugar fig jam.

      I know my comment is probably a little stale, but I wanted to let you know that this is my new FAVORITE sandwich. YUMMMMMM. I loved it so much, I've had it twice in the past week. (Minus the jelly - maybe I'll give that a try next week...)

      I am looking forward to trying this! It sounds great and I just so happen to have some pears sitting around and half a wheel of laughing cow that needs to be put to good use. Thanks for all the great ideas, I absolutely hate vegetables and some of your posts are opening my eyes to possibilities of not tasting them 🙂

      I have everything you've got listed - even the Aldi Fit & Active jelly. This may be lunch tomorrow.

      I've been using garlic hummus from Aldi in place of mayo on my sandwiches and in place of butter on my toast. I can't believe I didn't try hummus until Thanksgiving when I was in charge of apps for a gathering at my in-laws and there were going to be vegetarians there. I could eat a container in one sitting with carrots and snap peas- totally worthy of 8 points+!

      I switch up my deli meats based on what's on sale and what looks good. Sometimes I get sliced from the deli sometimes I buy the vacuum pack ones. You have to experiment to find what you like.

      Roni, what do you use for deli meat? I stay away from the deli sliced meats at my grocery store because it does not look or taste fresh. I do miss the ease of it, however.

      My favorite winter panini is 2 thin slices of bread, with a bit of fig spread (or jam), provolone, thinly sliced pear and a sprinkle of toasted, sliced almonds. Assemble and grill - no need for butter on the outside of the bread.

      Sounds De-Lish. Just got into the Laughing Cow cheeses. I already have a love of turkey and spinach as a sandwich - the Cheese will be an extra boost of flavor!

      Turkey and fruit works really well, like cranberry. BUT: it's not baby carrots, they're a "baby-cut" carrot, which makes me think they were probably humongous carrots before the machine cut them into that shape. If you get a mandoline that makes short work of turning them into sticks. I wash them but often skip the peeling.

      I added the jelly because I thought it needed one more thing but I didn't want to go mustard or an oil based dressing. Then I thought cranberry sauce and it led me to just a small smear of jelly. In my opinion it totally worked! BUt it would be good without it too.

      I was with you until the jelly...hmm..that never crossed my mind. Now I am curious, I might have to try it. It seems like it will be a taste explosion in my mouth. I just bought some laughing cow today..woo hoo!

      I flip flop between the two. Depends on how lazy I am that week and being pregnant and I'm getting lazier. 😉 But I agree... regular carrots taste better especially the ones I got at the farm!

      I know this is going to sound CRAZY but I stopped buying those little baby carrots and started buying normal old fashioned big carrots again. It takes all of 15 seconds to peel a carrot. The taste is totally different. Much better . . . aaaahhhhhhh. Anyway, I recommend it. Regular old fashioned carrots. The way G-d made em!
