Did I ever tell you my oatmeal story? I hated it until about 6 years ago. Well, hated is a pretty strong word, "avoided" may be better.
Oatmeal just never appealed to me. Who wants a big bowl of mush for breakfast? At least that's what I thought until I made it for the Little Guy when he started solids.
There was just something about the smell, even the plain baby food kind. It was just asking to be eaten, so I took a bite. That bland taste sold me and I bought my first container of instant oats, never looking back.
This morning, while making Little Bean's first bowl of oatmeal…
I celebrated with some for myself.
It. was. amazing! And super filling. Peaches are in season right now and I had some ripe ones from a local farm stand.
Here's what I did.
Ingredients
- ½ cup Old Fashioned Oats (40g)
- 1 cup of water
- pinch of salt
- ½ teaspoon ground cinnamon
- 1 tablespoon of Honey (21g) + some for drizzling
- 2 oz Greek Yogurt
- 1 peach cut unto small cubes with skin
Instructions
Put the oats, water, and salt in a small pot over medium heat, stirring occasionally.
Once the oats start to absorb a bit of the water (you'll notice the water getting cloudy and slightly thick) add the cinnamon and a tablespoon of honey. Stir until boiling. The oats will thicken in about 3 minutes.
Turn off the heat.
Stir in the yogurt and ¾ of the cut peach.
Once blended well, transfer to a bowl. Top with the remaining peaches and drizzle with a bit more honey.

Pregnant with my 4th and trying to eat healthier this time (and not gain 50+ lbs). Made this today but since I didn't have any fresh peaches, I used a greek yogurt that has the mix in fruit and used part of the yogurt and the mix in. It was AMAZING! I had only tried the peanutbutter/banana oatmeal before when making my own oatmeal and now that I realize how easy it is, I'll be adding oatmeal to my diet. I loved how sweet this was ( I didn't add the extra honey) and how full I felt after eating it. Thanks for the inspiration!

I really WANT to like oatmeal. It smells so good. In the pantry I have: instant, quick, rolled and steel. Have tried all but the steel and just can't quite stomache the texture. Makes me gag. Every so often I try again cause.....I really WANT to like oatmeal.....but I don't 🙁

Oatmeal by far my favorite breakfast! Love pumpkin pie oatmeal and chocolate oatmeal. 🙂 I like thick cut or steel cut oats though.

I am following WW and that helps me get in a dairy.
Never thought of adding yogurt, I will try that.

I eat oatmeal for breakfast almost every day, I LOVE it! Today it was plain oats (I like the old fashioned in the micro) with a sliced banana and a T of chunky peanut butter! YUM!
