    Overnight Steel Cut Pumpkin Pie Oatmeal

    There's nothing like a change in seasons to inspire new, fun dishes.

    Cindy recently left this comment on my Single Serve Steel Cut Oats Topped with Blueberries post,

    I love steel cut oats and look forward to trying this recipe. Any chance of you revising your pumpkin recipe with steel cut instead of old fashioned? yum

    A seed was planted.

    I knew I wouldn't have time to whip up steel cut oats anytime this week so I decided to try a new overnight idea.

    I researched a bit, but most of the recipes I found online use 1 cup of pumpkin puree. I hate that! If I'm going to open a can of pumpkin, I'm going to use a can of pumpkin. Know what I mean?

    So that's what I did and the result was way better then I ever expected!

    The spice combination was perfect and the texture was chewy yet smooth because of all the pumpkin puree. It's only slightly sweet, but I purposefully used less honey/syrup so people could top to taste.

    Both kids liked it but Little Guy needed some coaxing and a drizzle of honey on top.

    If his oatmeal doesn't have chocolate chips and banana in it, he's not really a fan.

    However, Little Bean LOVED it straight up!

    He couldn't even be bothered with the spoon. 😉

    Here's how I made it...

    Ingredients

    • 1 cup steel cut oats (162g)
    • 1 15oz can of pumpkin
    • 1 can of water
    • Pinch of Salt
    • ½ cup almond milk (skim would work)
    • 1 teaspoon cinnamon
    • ½ teaspoon ground ginger
    • ½ teaspoon nutmeg
    • 1 tablespoon honey (21g)
    • 1 tablespoon maple syrup (20g)
    • Honey, Maple Syrup, chopped nuts for topping (optional)

    Instructions

    Mix all ingredients together and cook on low in your slow cooker/crockpot for about 8 hours.

    That's it!

    I was a little worried it would burn and the edges did get a little crusty.

    But it was a yummy crusty!

    The recipe does make at least 4 servings, but have no fear! Just separate it in to small containers and warm in the microwave.

    It reheats beautifully!

    • 1 cup steel cut oats 162g

      This was so good this morning, and easy to dump in my slow cooker last night. I added some walnuts and about 1/2 cup of oat milk to my serving this morning as well as a bit more honey (all I had was hot honey, but that was great). Thanks for the great recipe!

      Made this last night and it was AMAZING!!! Just a warning though, like a few others have noted it only took 3 hours in my crockpot (luckily I was still awake at 2am and turned it to "keep warm"). It was so good I had it for dinner again tonight 🙂

      made them this morning and it only took 3 hours on low. any longer and I think it would have been too crusty. it was delicious!! I might add a bit more sweet next time. it was so yum I didnt slow down to drizzle honey but that would do the trick!

      sounds like a small amount for a crock-pot. what size pot did you use? Mine is a 5 or 6 qt. I think it's too big. I also have a 1 qt for dips, etc. I doing a breakfast/brunch for my bible study ladies in a couple weeks. could I double this? I noticed a comment that it re-heats nicely. would doubling be enough to use my big crockpot?

        I'm not sure what my crockpot size is but yes, the batch was on the small side. I do think you can easily double this but I haven't done it.

      Just discovered you from MoneySavingMom. Excited to try your recipes! I too did a recent search for a crock pot version for steel cut oatmeal. Found a great recipe that contained a comment that recommended cooking overnight on "warm" instead of "low." That eliminated the amount of crustiness. Cannot wait to try your pumpkin version.       Honestly, Ariel, regular oats would probably get too mushy. The only reason the slow cooker is needed is because steel cut oats take much longer to cook. You could probably make this on the stovetop with instant or old fashioned oats in about 10 minutes.

      Made this overnight last night. Super easy and delicious; not as sweet as I thought it would be but still quite wonderful. I topped with bananas and it was a warm, hearty breakfast. I'll be making this one again and again!

      Creamy yumminess! I've made it twice, and the second time I added some fresh grated ginger before cooking, and mixed chopped fresh pear in with it just before eating.

      I completely agree a out using the entire can of pumpkin! I just made a very similar recipe in the oven last night that turned out great with almost double the pumpkin than what it called for.

      Had this this past weekend, it was great! I had mine with sucanat and chopped pecans and a little dried coconut on top--delicioso. Will definitely do this again. It was really nice to wake up to this wonderful smell of fall through the house.

      We love our steel cut oats in the morning. Lately we eat them every day. I have found the perfect way to keep it from sticking. I wrote a post about it here on my site but here are the instructions for using the slow cooker. It's a bit more work up front but cleaning it up takes no time at all. The water keeps everything from drying out.

      1. Mix all ingredients in a bowl that will fit inside your slow cooker.
      2. Place a towel in the bottom of your slow cooker and place the bowl with the oats on top of it.
      3. Fill the slow cooker with water until the waterline outside of the bowl is the same as the waterline inside the bowl.
      4. Turn on low and leave overnight.
      5. In the morning use a turkey baster to remove enough water so that you can take the bowl out of the slow cooker.

      Hey Roni! Have you ever tried using crockpot liners? Reynold's makes them and they are AWESOME for things like this because you don't have any clean up. I started using them when my largest crockpot got a crack in it (I'm cheap and didn't want to just throw it out) and that's pretty much what sold me on them. I use them in my smaller crockpots when I am making sticky stuff (oats, apple butter, refried beans).
