    Orange Ginger Tuna Salad

    I'm going on day 2 of counting Weight Watcher Points and I'm already inspired to come up with light, healthy meals for myself. It's like I needed the constraint of points to motivate me. Isn't that weird?

    Anyway, all morning I was brainstorming what to make for lunch. I wanted something flavorful and satisfying and I think I hit the nail on the head, for me anyway. Armed with an orange, a red pepper, and my pantry I came up with an Orange Ginger Tuna Salad. You may never want a boring mayo based tuna salad ever again!

    This was sweet with a little spice, creamy and delicious! Oh! and it's a cinch to make!

    Here's what I did…

    Ingredients

    • 1 5oz can of light tuna packed in water drained
    • 1 small orange peeled and chopped (and any juice that leaks out)
    • ¼ of a red bell pepper diced
    • 2 tablespoon Fat Free yogurt (I used greek)
    • ½ teaspoon ground ginger
    • ½ teaspoon garlic powder
    • 1 teaspoon dried cilantro
    • pinch of kosher salt and ground pepper

    Instructions

    Put all ingredients in a bowl

    and mix!

    Make sure you squish at the orange a little to release of some the juice.

    That's it! I put mine and a bed of baby spinach on a Sandwich Thin adding a side of carrots. It was the perfect lunch!

    Here's the nutritional info just for the tuna salad so you can serve it anyway you like (in a pita, on a salad, straight up!)

      I just had this last night and I loved it! The orange made it sweet and yummy! 🙂 i didn't have ginger so i used nutmeg and i didn't have cilantro so i used parsley! I served in a green bell pepper half! SOO Good!!!

      Ok - I love the creative juices you have with your rekindled old WW points tracking... I wish I liked to eat oranges or citrus for that matter - I love the TASTE but not the "chewy" part! LOL! Each year I try to eat a cutie or an orange slice and well... I just can't! My kids laugh each year!

      Ok keep the juices flowing Roni! :O)

      Sounds great!

      I need the structure of points. I did simply filling for 6 months but i still wrote down everything. I don't mind counting, it actually makes me feel more in control, its 2nd nature and life to me

      Just made it and am eating it right now. Sooo good. Instead of the yogourt, I used your other tip of mashing in the laughing cow cheese. Used fresh garlic and cilantro. Served with a mug of green tea and some melon. Happy happy. Thanks yet again Roni!

      I love sushi grade tuna and seared tuna at restaurants but canned tuna grosses me out. I love this idea though. I'm thinking I can make this with canned chicken instead.
