
I've never eaten coleslaw in my life. Is that weird? Isn't that was a cabbage salad is?
Anyway, I was armed with the cutest little heads of cabbage from the farm and, yup you guessed it, feta. 🙂 So i decided to combine them together and I'm so glad I did! This was fabulous! I almost ate the whole bowl in one sitting. I had to force myself to save it for dinner.
I had both the husband and child taste it. The husband said it was ok but he's not a cabbage man. His reaction was pretty much what I expected. The Little Guy, well, let's just say he was brave to try it even though he ended up spitting it out. Hey.. you can't win them all. 🙂
Ingredients
- 2 small heads of cabbage (about 2 cups shredded 140g) I used 1 red and one green.
- ¼ cup crumbled feta (34g)
- ½ tablespoon honey (10g)
- 1 teaspoon olive oil (5g)
- 1 teaspoon oregano
- 2 tablespoon red wine vinegar
- Pinch of fresh ground black pepper or more to taste.
Instructions

To make the dressing put the feta, honey, olive oil, oregano and vinegar in a bowl and...
... whisk with a fork, squishing the feta making a creamy dressing like so...
Pour the dressing over the shredded cabbage...
and toss!
Enjoy! I could easily eat the whole batch but I'll split it into 2, 1 cup servings. It's a nice size. You could easily split it 4 ways for a small side with dinner.

My First Cabbage Salad!
Ingredients

I have to say I am not a fan of most cole slaw but it's because of how the cabbage is cut. I don't like it in the least chunky...has to be either grated in a food processor or finely shredded for me. I usually buy the angel hair shredded cabbage in the bagged salad area of the grocery store and use it in salads, soups, stir fried dishes, noodles, and anything else that needs a handful of quick veggies. Roni, your little guy might be more willing to eat it if you just keep varying the cut of the cabbage til you find the one he likes?

I make something almost exactly like this based on Zoe's Kitchen's Marinated Slaw that contains feta, scallions& a light vinaigrette-no mayo) except I usually leave out the green onions. I usually grab a bag of the Angel Hair Cole Slaw--which is only finely shredded cabbage, a little salt & pepper, crumbled RF feta cheese and a simple vinaigrette dressing--toss together and enjoy. It is truly one of my favorite side dishes or snacks. I actually had this today and added a little parmesan cheese and it was wonderful.

I have never tried this recipe but it looks really delicious. So far I have only been able to mix cabbage with Mayo and I am desperately on the lookout for healthier meals to help me lose more weight. I will surely explore your other recipes too!

Im a HUGE cabbage fan, and my boyfriends mother always made cabbage salad that was similar to this but i suspect very high in calories. I was PUMPED to find this recipe. Made it without the honey (not a fan of honey personally... Iknow Im weird) and it was still delicious. Thanks Roni!!

I swear that I didn't eat coleslaw until I was like 30, but my husband loves it, especially the old school KFC recipe.
I didn't know about the soft cheese limitation until a couple years ago (2 years too late). One of my pregnant friends was complaining about missing queso cheese. I asked why. My doctor never told me.

I've been substituting extra sharp cheddar for blue cheese. That seemed like it might work, but I'll just look for pasteurized feta. One thing to add back on to the list!

SUCH A COINCIDENCE. I was coming on your site today, specifically to tell you that all your Feta recipes finally got to me. I love Feta - but almost never buy it. I bought some a week ago and have been using it ever since. This morning, I made a spinach, ham, onion and feta cheese omlet. OMG. Delish.
And, last night -- I made fish tacos. Took some fish, basically the ones that are frozen separately in individual bags, and I put spices on them and cooked on the stove. Added onion and garlic and "crumbled" the fish up to make the filling. Then I made a cabbage mixture with shredded cabbage, cilantro and lime to use as "lettuce". SO GOOD. Of course, fish tacos topped with Feta.
I was going to write this exact comment no matter what meal you made today. Kind of funny that it actually was related to cabbage. HAHA!

I'm close to 6 months pregnant and have been using pasteurised soft cheese with no problems.

Do you think there might be a good non-soft-cheese substitute for a pregnant diet? *sigh* So many things are off limits...

Sounds fab! Also you gotta try this but with a yoghurt dressing! Natural or greek yoghurt! Even just basic red cabbage plus the yoghurt all mixed up! DELISH. Especially as you don't like mayo. It's got the mayo texture but not the mayo taste. I'm not a big mayo fan either. 🙂
Oh for a very quick and simple home made yoghurt dressing try mixing 6 tablespoons of natural yoghurt, 2 tablespoons red or white wine vinegar, 1 tablespoon good virgin olive oil, salt and pepper.

Have you ever had the ramen noodle slaw? It's cabbage, dry ramen noodles, sunflower seeds and I can't recall what else but google "cabbage ramen noodle slaw" and you'll find it. Great picnic dish and no mayo. The noodles soften up from a dressing you make and it's a sweet/sour crunchy thing. Really good.

The mix of cabbage and vinegar gets my taste buds happy. I love the mix on a side salad. But feta makes it even better!!!!

This looks delish! I love a good cabbage slaw mix but find most of them so drenched in fat or sugar that you can't eat them guilt free... however this feta idea is brilliant! I am gonna put this one on the grocery list!
