The husband gave me this idea the other day even though he doesn’t realize it. See, he’s a big meatball sub guy. He LOVES them. However, his favorite place for meatball subs changed their recipe a few years back and he hasn’t had one since. I’ve offered to make them for him but he’s stubborn like that. Whatever!
Anyway, he mentioned how upset he still is that this particular restaurant changed their recipe and I immediately thought, “Hmmmm meatball sub. That sounds YUMMY!”
I had leftover Turkey Meatballs from a batch of Homemade Sauce I made a few days ago. The husband is more of a sausage guy when he have pasta (weird, I know) so there are always plenty of meatballs leftover for me!
You could really use any meatballs you like for this but the ones cooked in sauce were exactly what I was looking for.
Ingredients
- 1 whole grain/low carb tortilla
- About 1 cup baby spinach leaves
- 2 leftover turkey meatballs (with a bit of sauce on them)
- ½ oz finely shredded part-skim mozzarella cheese
Instructions
Cut the meatballs in half and warm in the microwave for about 30-45 seconds.
While the meatballs are warming, lay out the tortilla on a plate and top with the baby spinach leaves. When the meatballs are done, place them on top of the spinach.
Sprinkle with cheese (and yes that is only ½ oz pictured, I told you that fancy shredded stuff is great!) and pop in the microwave for about 10 seconds to warm the tortilla and help melt the cheese.
Roll up and serve!
This really might be the quickest tasty lunch ever! I had it with a side of carrot sticks yesterday for lunch and I think I’m about to make myself another one for snack right now!

This looks really tasty. I think that I've seen something similar at one of our church festivals, but with beef. I bet it would be really tasty with a tzatziki-type sauce in place of the cheese, too!

Ooooo! I made something similar to this a couple of months ago. I used WW pitas instead of a wrap, but now I think I need to try it with a wrap AND the spinach.
