Kale Salad, Pepperoni Pizza Style

We've talked about my pizza addiction, right?

It's bad. So bad I even have a whole category devoted to pizza-like creations!

Kale Pizza Salad I'll be the first to admit many are really far from traditional pizza, but I love taking the concept and flavors and having fun with them. And that's exactly what I did with this salad.

The result was TASTY. So good in such a simple way. I'll definitely be making it again.

Here's what I did…

  • 100g of raw kale
  • 1 tbsp balsamic vinegar
  • 1 tbsp red wine Vinegar
  • 1 tsp olive oil
  • 1 tbsp honey
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • healthy pinch of salt
  • 15 or so cherry tomatoes, halved
  • 1 Mini Babybel Mozzarella Cheese Round
  • 8 slices of small turkey pepperoni

Chop the kale into small ribbons.

In a small bowl combine the vinegars, oil, honey, garlic powder, oregano and salt.

Pour the dressing over the kale and massage with your hands. It's messy and the kale will stick to you but it's worth it.

Add in the tomatoes, toss and pile on a plate.

Time for the cheese!

I used a Mini Babybel Mozzarella for the perfect ¾ oz serving.

I used my egg slicer trick to make the perfect small cubes.

Pepperoni time!

I know it's not the best for me, but I was raised on pepperoni and it has a soft spot in my heart. I usually keep one of these packages on hand for fun snacks.

pepperoniI don't eat it nearly as much as I used to, but when I do I love the flavor.

Cut a half serving into thin slices.

Top the kale and enjoy!

    Oh my gosh Roni! This looks amazing. I can't wait to try it....and I think I'll put a smidge of tomato paste in the dressing as I've just recently purchased the kind in the squeezie tube so I can use little bits without opening a whole can.
