Between this and this I'll never make tuna with mayo again. Not that I was making it very often, as I hate (despise would be a better word) mayo. There's only one sandwich I use it on (this one) and I use so little, one jar would last me a lifetime.
Anyway, my goal isn't to bash mayo, it's to give you new ideas and I hope this one inspires you.
I just whipped up a Guacatuna Salad Sandwich. Well, at least that's what I'm calling it. I've never been a big guacamole fan, but dude… mix some mashed up avocado in tuna and YUM! This sandwich was flavorful and satisfying. Now that I'm keeping more avocado around for Little Bean I can see this becoming one of my go-to lunches.
Here's what I did…
Ingredients
- 1 oz (28g) of avocado
- 2 tablespoon (28g) Salsa
- ¼ teaspoon cumin
- ¼ teaspoon chili powder
- ¼ teaspoon dried cilantro
- â…› teaspoon kosher salt
- ½ teaspoon lime juice (lemon would be fine)
- 5oz can of light tuna drained well
Instructions
Scoop out the avocado and mash.
Add the rest of the ingredients and mix well.
That's IT!
I ate mine on a sandwich thin, but you could stuff a pita, top a salad, or even roll in large lettuce leaves.

I've gone back to WW and am at the start of my 5th week. I'm toying with the idea of doing Simply Filling (core) and I'm trying to focus on "power foods' this week. As I was planning last night I recalled this post, realized I had an avocado and decided to give it a try. Instead of following your recipe I adapted my own: Tuna, Avocado, diced onion and red bell pepper, some lemon juice and cilantro. I let it sit in the fridge for a while to mingle flavors and had a delicious lunch! Thanks for the idea Roni!

Erika--just don't buy them super hard as sometimes they'll never soften and DON'T put it in the fridge if you want it to ripen. They'll just stay hard. My friend bought one to turn into baby food and couldn't figure out, why, after two weeks it was still rock hard. *sigh*

I think I'll have this for lunch tomorrow. I made a ton of guac for dinner tonight so there is plenty of leftovers. I also cannot stand mayo. The mere smell of it makes me queezy. For some reason though, I really like miracle whip. Odd how our tastes develop. I was never given mayo (except in killer NYC subs) as a kid, always miracle whip and now that's all I like!

Yup! and just so you know, they do ripen on the counter. So you can buy hard ones and they will soften up on you.

It was funny, I was grocery shopping today and there was a pile of avacodos... I went over to get one to make this recipe and I was looking at them and trying to figure out which ones were ripe. Panicking, I told myself to trust my instincts because I really had never bought an avacodo before. So I picked one up, turned it over, and it had this big sticker that said, "Ripe when soft" on it...I laughed to myself and kind of thought, " You just need to ask!"
