    Grilled Mexican Pepper Tortilla Panini

    Yet another lunch time experiment this week. This one I liked so much I made it twice today!

    It's really the results of having too many peppers and not being quit sure what to do with them. Plus I wanted something warm on this overcast day.

    Now I'm going to give you the idea and recipe using my George Foreman Grill (GFG). You can use a skillet but you'd have to flip, of course, and maybe use a technique like my water pot trick.

    I'm a huge fan of the GFG not because it “knocks out the fat” but because, in the words of my favorite Food Network Star, it's a multi-tasker. I use it as a grill, panini press, grilled cheese maker, quesadilla maker, for veggies, burgers, hot dogs. I never have to spray it with non-stick spray unless I want the flavor and the model I have goes in the dishwasher!

    Ok, not sure where that review came from, anyway, here's the idea...

    Ingredients

    • 1 pepper cut in half and cleaned (I used a green bell that was halfway red)
    • 1 lite tortilla
    • 1 oz fancy shredded Mexican cheese blend
    • pinch of kosher salt
    • sprinkle of chili powder
    • sprinkle of ground cumin
    • a few sprigs of fresh cilantro or a sprinkle of dried cilantro

    Instructions

    Heat the GFG.

    Cut and clean the pepper. Place the pepper on the grill skin side down. Close the top and cook for about 3 minutes. That should just give you scorch marks.

    Remove the peppers and slice.

    On one side of the tortilla sprinkle about ½ of the cheese. Top with sliced peppers. Sprinkle with remaining cheese and spices. Fold the tortilla in half (quesadilla style).

    Place the tortilla on the grill open side upwards, close the top and cook for 4-5 minutes. That should melt the cheese and toast the shell.

    Cut in half with a pizza cutter and enjoy!

      GENIUS! I wil be making this and I know I will love it! What's not to love? And the other day I was watchign good eats and he was talking about sandwiches and he was showing a panini press and I thought to myself "that looks just like the gfg I wonder if you could use the gfg as a panini press?" Thanks for reading my mind and answering! Lol I do have a gfg and I never use it but I will defintely now!

      I tried this tonight - don't know why I never thought of using the GFG for quesadilla-type sandwiches before! D'oh!

      I added some leftover, cooked chicken and a bit of hot sauce.

      I love my GFG — and the new abbreviation for it. (I've affectionately been calling it "the Foreman grill" for short, which of course isn't all that short.)

      Michele - Ok, I should have explained the points thing. See if you total the NI it's 5 however if you calculate it the points way (1 for the tortilla, 2 for the cheese, etc) you can get it as low as 3-4. So That's my way of saying it's a range and letting you decide.

      I go by nutritional Info, so I counted 5 but I think that's high for this.

      As for the grill, yup! I traded in for that new model and I'm do glad I did. The grills disconnect and wash up nice in the dishwasher. I linked to that model above.

      Hope that makes some sense. :~)

      Hi Roni - why are there 2 WW points on some of your recipes? Like this one 5 (4). Can you please explain what that means?

      Oh...and I didn't know there was a George Foreman Grill that you could put in the dishwasher. I'll have to look for that! I never use the one I have because it's such a pain to clean.

      I have a GFG and NEVER use it. For some reason, I am really afraid of over cooking things on it. Not sure why.
