Yup. You read that correctly. BEET as in those red vegetables that stain your fingers pink.
Honestly, I have no idea what possessed me to make this. I don't particularly like beets. I mean I like them, but I don't looove them.
Two summers ago I made them for the family a few times because they were part of our share from the CSA...
I considered buying them again but they are quite pricy at my local grocery store and each bunch only contains 2-3 beets. It just didn't seem worth it for a vegetable we just "like" when there are so many more we LOVE (like Brussels sprouts, broccoli, asparagus, even peas.)
However, I always have a can or two in the cabinet because like mom, I'm a pantry stocker. Plus, you just never know when you'll want to make a batch of Beet-elicious Cupcakes! 😉
Anyway, I pulled out a can and decided to make a sandwich out of a few slices and some fresh mozzarella I bought at a local deli.
The result was delicious! Alone I find the beet texture a bit overwhelming but on a sandwich it was fun and meaty. Adding a sweet earthy bite.
I used spinach because it was the only green I had but I'm thinking arugula would be great on this. Adding even more flavor.
Here's what I did…
Ingredients
- 1 Whole Grain Sandwich thin
- 1 oz fresh Mozzarella in 2 slices
- Handful of Raw Spinach
- 4 Slices of Canned Beets
- Sprinkle of dried basil
- Dash of Balsamic Vinegar
Instructions
Heat a small non-stick skillet over medium heat and layer the sandwich together.
Start with the bottom of the thin, then top with 1 slice of the mozzarella cheese.
The cheese is the glue so you want a little on the top and bottom.
On top of the cheese add the spinach, beets and the second slice of mozzarella. Sprinkle with the dried basil.
Add a splash of Balsamic vinegar and top with the other half of the thin.
Grill it about 2-3 minutes a side pressing slightly to squash the ingredients together and merge the flavors.
Remove from the skillet, cut in half and marvel at the pretty sandwich. At least that's what I did. 😉

I googled "grilled cheese and beets" (thinking they'd be nice together) and found this recipe. Just made it with jarlsberg cheese and drained canned beets. The oregano and balsamic vinegar are brilliant. I buttered my whole grain bread lightly. This is SUPERB!!! Can't wait to make for my husband.

Let me tell you, you have earned my confidence and I will definately be trying more...I'm not a big fan of beets but I am pregnant and trying to get creative in incorporating more healthy food into my diet. Beets are great in salads, too... I make one with arugula, beets, feta cheese and a citrus vinaigrette. Delicious!

Im from New Zealand and we put canned beets on our burgers. Even McDonald sells a burger called a kiwi burger containing beets and a fried egg.... (kiwi is a bird only found in nz and refers to people from nz.)
