
I was going to call this "reverse pizza" or "upside down pizza" but that doesn't quite describe it right. I had an idea to use a spreadable cheese for the "sauce" and then fresh garden tomatoes as the "cheese" for a quick pizza like dish on a tortilla.
It worked!
Like a charm!
This was quick and yummy! Such a fun way to use the fresh tomatoes you have hanging around from the garden or farm stand. I used a few slices of a large vine ripen red tomato and then added a few slices of super sweet orange ones. The combo was so pretty especially topped with some fresh basil.
Here's what I did…
Ingredients
- 1 Whole Wheat Tortilla
- 2 Wedges of The Laughing Cow Light Garlic and Herb
- 4-5 slices of tomato
- Kosher Salt and Garlic powder for sprinkling
- 10-15 basil leaves chopped
Instructions
Preheat the broiler.
Smear the tortilla with The Laughing Cow Light Garlic and Herb. Top with the tomato slices. Sprinkle with a a bit of salt and garlic powder.
Broil for about 5 minutes until the edges just start to brown.
Remove from the oven, top with the fresh basil and enjoy!
You may notice in the photo, my tortilla was quite soft. If you want a crisper crust, pop the tortilla under the broiler for a few minutes before smearing with the cheese.
I enjoyed mine while getting a lesson in Pokemon.
Someone is quite obsessed at the moment.

We just made these for dinner on the gas grill outside...delicious! Each of us made our own individual pizza(s) with our favorite toppings. In addition to fresh tomatoes, red onion, tomato sauce, basil and both fresh and shredded mozzarella, I had even cooked up some Aldi turkey bacon and some turkey sausages on the grill. I had never tried cooking the bacon outside like that. So easy and no mess! Actually, the whole meal was easy and clean up after was minimal!
Thanks for the idea of the Laughing Cow! We've made pizza on the tortillas before, but the Laughing Cow was a new twist! Next time I'm going to try the pizza with the mozzarella, tomato and basil flavor.
