Well, this may be a dish only "the cook" can love.
I whipped this up on a whim a couple of days ago. I really didn't know where I was going with it. I just wanted a big bowl of warm goodness and that's what I got.
It may not be your thing but hopefully it will give you a few ideas. Here's what I did…
Ingredients
- 10 oz Can of Tomatoes with Green Chilis
- 10 oz Healthy Request Cream of Chicken (go with mushroom for a vegetarian dish)
- 15 oz Can of Black Beans Rinsed and Drained
- 1 teaspoon Dried Cumin
- 3 oz Frozen Spinach
- Shredded cheese and dried cilantro for garnish
Instructions
Put everything in a pot, bring to a boil and then simmer until ready to eat.
That's it!
I ate it three ways.
1. On top of a bed of spinach.
It was good but a little spinach overload.
2. Over spaghetti squash
YUM!
3. In a wrap.

My first thought when I saw this was that it would be good with brown rice. I made it for supper tonight and as I was getting the rice out of the cupboard, I decided to used a package of Isreali couscous I had to use up. It was delicious. A quick easy supper and so versatile. It can be served with so many things. I will definitely make this again. One question--it says drain the black beans, but did you also rinse them?

I was scrounging trying to find something to make for dinner tonight so I took the basis of this and added zuchini. I mixed it with whole grain Penne pasta. Yummy

Sheri - I didn't. I was thinking of adding water to make it more of a soup but decided to keep it thick and use it more like a chili or stew. The soup thins a little with the juice from the tomatoes and then it thickens back up when you simmer. It's perfect thickness for stuffing a burrito or topping rice.

That was SO yummy! I just made a pot, and ate some with a pita. It reminded me of an indian saag dish. Next time I make it, I may add a little garam marsala and serve it with Naan or basmati rice. I think my husband would eat it! Thanks for the quick dish! LOVE IT!
