Cranberry Topped Cheese and Cucumber "Crackers"

I think I've confessed my cheese addiction before but just in case I'll say it again…

I LOVE CHEESE!

One of my favorite snacks as a kid was to cut hunks from a block of cheddar, slice some good pepperoni and top a buttery cracker. It was a texture thing, a taste thing and, well, a mindless thing. Before I knew it I'd look down and the block would be gone!

Now I try to snack a little smarter and a lot more consciously.

Now my cheese and crackers looks like this…

Cranberry Topped Cheese and Cucumber "Crackers"

I replaced the crackers with cucumber slices. I replaced the hunks of cheddar with creamy Laughing Cow. And I replaced the greasy pepperoni with sweet dried cranberries. I also make a plate ahead of time and have everything portioned out making it a lot less likely to look down and notice a whole wheel of Laughing cow is missing!

Cranberry Topped Cheese and Cucumber CrackersSo I still get my creamy texture delivered on a crunchy bite but by removing the mindless thing, I now have no regrets enjoying one of my favorite snacks.

Here's the details…

  • 1 wedge of The Laughing Cow Light Swiss
  • ½ of fresh cucumber sliced ~10 slices
  • 10g of Dried Cranberries (~20)

Smear the cheese evenly on the cucumber slices

Top each with about 2 dried cranberries

Enjoy without feeling an ounce of guilt. 🙂

    This looks great. I started a Ladies Poker Night a couple years ago, and we take turns hosting. (There is never any lack of food). Recently I joined Weight Watchers, and now am looking for something different and healthy to serve up to the girls when they come to my place. These are the cats meow! I am going to see what else you've got up your sleeve. Thanks so much.. You have sparked up my enthusiasm to eat well.
