
I'm am loving fall right now! It's been gorgeous. The leaves are at their peak.
And I have a host of new fresh produce to play with, such as winter squash and cranberries.
Being raised with canned jellied cranberry sauce as a kid, I never really had fresh cranberries.
I don't know what to do with them -- suggestions welcome in the comments! *hint* *hint*
I decided to start simple and make a smoothie.
Good choice!
The cranberries added such a nice tartness and color to my morning smoothie.
It was a nice change and a filling breakfast.
Here's what I did …
Ingredients
- 1 small apple
- ½ cup fresh (or frozen) cranberries
- ½ cup plain yogurt (I used full fat)
- 1 tablespoon honey
- ½ teaspoon ground cinnamon
- 10 ice cubes
Instructions
Put the apple, cranberries and yogurt into the blender first. This is always my technique when working with fresh (unfrozen) fruit or vegetables.
It blends all the fruit into a nice puree.
I didn't put the honey in right away so I could taste how tart the base would be. This way I could add just enough for my taste.
I decided on a tablespoon of honey to take the edge off. Those cranberries are tart!
Add the honey, ice cubes and cinnamon to the blender and blend again until smooth. Pour into a nice class and marvel at your perfect fall smoothie!
So much better than that juice cocktail from the grocery store. 😉

I am in love with the refreshing taste. Really good. I cut recipe in half because of the calorie content and used a small vanilla activia yogurt for the yogurt. Yummy. Thank you for a new way to use cranberries.

Something simple and basic that I LOVE is a cranberry banana oatmeal: old fashioned made with chopped banana and minced/chopped cranberries. It's also really yummy with some canned peaches in water/juice. Hit me up if you've got more questions.
I also really love make a salsa with fresh produce and toss on crackers w cheese or over a protein for dinner.
I've actually been looking for my local store to have them on the shelves so I can stock up, I LOVE THEM!!!!

I make a Christmas jam..using a bag of cranberries, coarsely chopped, 2 (10 oz pkg) of frozen strawberries, 4 cups sugar and 1 pack of Certo..it turns out so pretty and yummy. This smoothie is somethin I am going to try. Thank you.

I use a little less then a 1/4th cup of cranberries with a half a cup of blueberries (about 60 grams) and a couple of drops of stevia to counter the tartness. It goes great with the blue berries and you still get the distinctive cranberry taste and health benefits.

This looks good. Don't see too many smoothie recipes featuring cranberries. Will have to try. Also, great photography!

I make a cranberry orange sauce, then use that for oatmeal, sandwiches, etc. I use a simple recipe of a bag of cranberries, juice on an orange, the zest of the orange, pumpkin pie spice and 1/2 c brown sugar. Mix it up in a saucepan until the berries start to pop. Nothing better!

Take fresh cranberries and make into cranberry sauce. Any recipe out there will suffice.

It is SERIOUSLY yummy and freezes very well! Come to think of it, CRANBERRIES freeze very well, in the bag just like that so you can save them for later if you need to. Hope that you enjoy!
