I told you guys I rarely read recipes, right? It's funny but when I read them and actually find out what's in the dish I'm not as inspired to make it. Oh I'm an odd duck, I know. lol Anyway I saw this recipe and I immediately got an idea for my own Chickpea and feta idea.
Here's what I cam up with. Oh! and I didn't have any red onion although I think is would be great in this. I just decided to skip onion all together.
Ingredients
- 1 teaspoon olive oil
- 2 limes
- ½ tablespoon honey (10g)
- Kosher Salt
- Ground Black Pepper
- 1 can of Chickpeas (Garbanzo beans) drained and rinsed
- ½ cup grated carrots
- ½ cup Fresh cilantro
- 2 oz Feta Cheese
Instructions
Gather all your ingredients.
Grate the carrots.
Rinse the chickpeas.
Loosely chop the cilantro.
Start by making the dressing.
Remove some of the peel from the limes with the grater. You don't have to get it all just about a teaspoon or two to bump up the flavor. Add the peel, the olive oil, honey, salt, pepper and juice from both limes to a bowl and whisk.
In a larger bowl add the chickpeas, carrots, feta and cilantro. Pour the dressing over. Toss and eat!

Reduced fat would be great. They only sent me regular for this batch. I'm hoping to try the reduced fat net week.

This looks great, I've been trying to eat beans more frequently lately. Its such a great source of protein I'd never thought of mixing cheese with them, this might help convince my kids to try them out. Great recipe.
