Chicken, Kale and Sweet Pepper Wrap

Sometimes things don't go according to plan but they still work out, like this idea for a Chicken, Kale and Sweet Pepper Wrap. Originally I was thinking I'd use the kale leaves for the wrap itself but once I pulled out the ingredients I realized it just wasn't going to work. Thankfully I had some tortillas on hand so I decided to put the kale IN the wrap. It worked out great! I loved the combo of salty bacon, sweet peppers and slightly bitter kale.

Ingredients

  • 1 thick slice of sweet onion chopped
  • ½ of a sweet orange pepper chopped
  • 1 tablespoon real bacon bits
  • 2 large leaves of fresh kale chopped
  • 2 oz cooked chicken (I used leftover rotisserie that bought the other day)
  • 1 whole wheat low-carb tortilla
  • Olive oil non-stick cooking spray
  • kosher salt

Instructions

Spray a small non-stick skillet with the cooking spray and heat over medium-high heat. Add the onion and cook until browning. You want the flavor. Once brown add the pepper. Sprinkle the peppers and onion with a bit of kosher salt. Add the bacon bits and lower to medium heat. Stir and let the flavors combine a bit.

Add the chopped kale and stir in. It will start to wilt. Add the chicken, stir to combine and cook until warm. About another 1-2 minutes.

Pour the chicken, kale and pepper filling into a the tortilla. Wrap and eat!

I'm basing the nutritional information on a standard low-carb whole-wheat tortilla that is about 90 calories. The WWP are based on total nutritional info but if you count points for just the tortilla, chicken and bacon bits (everything else is free) it's about 4. That's why I put it in parenthesis.

    Hi Jessica - Thanks for the comment but I'm not sure what you mean my "gluten free menu choices" I don't categorize anything as gluten free. That being said you can make this on a gluten free wrap if you have a brand you like.

    This is listed under your gluten free menu choices, but is wrapped in a gluten full wrap. It looks delicious, and I miss wraps, but was sad to see that it isn't a gluten free wrap.

    Going to make this tonight with on-hand spinach instead of kale. I was wondering what I was going to do with that yellow pepper. Have been off the wagon after losing 30lbs with WW. Now back up 10. Came back to your site for motivation. Thanks Roni!

    Now all I need is kale, sweet peppers, onions and bacon bits and I am so making it....ha ha ha (As you can see, I amuse myself).

    This looks soooo good. I am definitely picking up these ingredients this weekend.

    That's how I get my bacon fix! 😉 I buy 'real' bacon bits in the small bags at my local grocery store. Most brands are only 25 calories a tbsp and little goes a long way to give you that bacon flavor.

    I was suprised to see bacon! Did you make a slice fresh to turn into bits, or did you find some brand of real bacon bits? Sounds like a delishious treat.

    I read your subtext, alright. I'm agnostic, that means I beliave in a god, whatever he/she is what they told us to belive in. Anyways, I felt like thinking on your last experience as something he/she/it needed you you to got trought.Why? ON ly time can tell.
