    Cheesy Tomato Soup with Peas and Orzo from the Pantry

    I'm on a soup kick at the moment. Blame the rain and slightly cooler temperatures. For as much as I don't want summer to end, I'm welcoming the change. Nothing inspires me more in the kitchen than a new season. I start to remember all the things I forgot about and then get excited to find them again. Like SOUP! lol I'm a geek like that.

    Anyway, this idea isn't my lightest, it isn't my healthiest, but it sure is tasty! And it works for a great, fast meal when you have nothing fresh on hand.

    I opened the pantry and grabbed the first thing I saw, a can of tomato soup. It was really all I had on hand for lunch, but I knew it wouldn't be satisfying all on its own. So I decided to doctor it up a bit. I've done this before. I think building a meal out of a can of soup is a fun twist instead of the classic soup and sandwich lunch.

    I looked more and saw the orzo pasta. Then I remembered The Laughing Cow!

    The result was a tasty, filling, and thick soup. Possibly too thick but I left it that way. I didn't want to thin it out and make two servings, well, because I was HUNGRY, but I'm sure you could actually do that.

    Here's what I did.

    Ingredients

    • 1 oz dry whole wheat orzo pasta
    • 10 oz can of Condensed Tomato soup (I used the healthy request kind)
    • 2 wedges of The Laughing Cow Light Swiss
    • ½ cup frozen peas

    Instructions

    Bring 2 cups of water to a boil and add the orzo. Cook for about 12 minutes until the pasta is soft. Do not drain. Add the tomato soup to the pot with the water and the pasta. Stir until incorporated.

    Bring the soup to a boil and then lower the heat to medium. Stir in the cheese. It will begin to melt after a few minutes, just continue to stir until it disappears. Stir in the peas and serve.

    Now let me warn you, points are high in this but like I said, it was super filling. By thinning it out with a little water you could get two bowls with half the calories and such. I'm pretty sure I'm the only freak that wants it that thick, but I'll give the nutritional info for one serving because that's how I ate it. You can always half it.

      Just made this recipe and it was delish! I did thin it out with more water and didn't have whole wheat orzo so used whole wheat macaroni and tasted great. So so easy. Thanks for a great one!
