    Roasted Red Peppers Stuffed with Cheese and Cucumbers

    I get too giddy about food. It's sad. It really is. There is nothing I enjoy more then the challenge of looking in the fridge and coming up with something fun to eat. The creative aspect of it is as satisfying if not MORE satisfying then the eating aspect. Seriously, I'm a freak.

    Today I got a package in the mail that made me smile eat to ear. Just look...

    CHEESE! Not any old cheese but The Laughing Cow whole light line! I was ecstatic. I hope to be making an announcement soon about my relationship with The Laughing Cow. All I can tell you is that I'll be working with them this year. Not at the intensity as Athenos Feta (boy THAT was intense) but you will notice a few Laughing cow cheese ideas on popping up on GreenLiteBites now and then. I couldn't be happier. I've always been a fan of their products and to be able to work with them is totally fun. I'll fill you in more of the details when I can.

    In the mean time you get my latest creation, Cheesy Stuffed Roasted Peppers! OMG this idea came out better then I ever antnicipated. It was an awesome, satisfying, tasty, light snack. I've already made it 3 times going through an entire jar of roasted peppers!

    Ingredients

    • 2 wedges of The Laughing Cow Light Creamy Cheese (Your favorite flavor I used swiss)
    • About â…“ of a large cucumber cut into small cubes
    • ¼ teaspoon garlic powder
    • ¼ teaspoon dried oregano
    • pinch of kosher salt and fresh ground black pepper
    • 4 Jarred Whole Roasted Red Piquillo peppers
    • Dried parsley for garnish (optional)

    Instructions

    Here's all the ingredients...

    Combine the 2 wedges of The Laughing Cow Light Creamy Swiss cheese with the cucumber cubes, garlic powder, oregano, salt and pepper. Keep stirring together until you get a nice creamy texture. It will look like this...

    Carefully open a pepper and stuff in the cheese cucumber mixer. Repeat for the 3 additional peppers. Arrange on a plate and garnish with a sprinkle of parsley.

    Pretty simple, no?

    I made enough for 2 servings which for me was 1 serving but I'll still list it as two since I used two wedges. Maybe you'll share OR even have someone to share with. The husband wouldn't eat something like this if it was the last thing on earth. lol

      Excellent recipe! While in Italy this past fall I found another, similar brand to Laughing Cow and this one was parmesean flavored!! I added it to frittatas, smeared it on roll ups and munched on them plain!

      I have been wanting to try this for a while now and I am kicking myself for waiting! It is so yummy! I love the creamy and crunchy inside with the smoky sweet pepper! Yum!!! I used plain roasted peppers so it ended up being one serving per pepper. I was also surprised that when putting it into the WW tracker roasted red peppers are a few points (worked better to use the actual nutrition content on the pepper jar than the weight watchers point calculation). The whole recipe was still only 3 points. This is a favorite! Thanks Roni!

      I JUST noticed that you have been using roasted piquillo peppers..all along I thought they were red bell peppers! I had no idea that piquillos came jarred, and I love them! Off to the store to find me some. A bunch of your recipes just became "available" to me! Yay!

      That looks awesome! And I love the idea of putting the stuffed peppers in a pita too. I'm 13 weeks preggo & I'm craving peppers, olives, & pickles. Btw, I love your typo, "smile eat to ear." 🙂

      You know how some folks have the "cilantro gene", and they think it tastes like soap? I think I have the "pepper gene", cause no matter which way the peppers are prepared they taste ANYTHING but sweet to me. It's a bummer too, because they are so healthy, and I swear people put them in EVERYTHING. I spend a loooot of time picking peppers out of things!

      ohhh this looks sooo good! My husband would gobble down 10 of them though! Are the paquillo peppers the ones that are like mini bell peppers? They usually come in 4 different colors in a pack? I'm still recovering my throat surgery, but when I can eat again, I will totally make this! Thanks for another nummy recipe!

      OMG -- you are psychic - I also have a stash of laughing cow cheese, not used at Christmas. I still have to try the Orange Smoothie ... but ...our Christmas celebrations just finished. Tomorrow.
      1. Orange Smoothie and 2. Cheese Peppers..

      And still have to post the chocolate macaroons experiment before end of 2010!

      Great stuff, since I am now in healthy eating mode = and looking at getting in better shape and leaving the baking to a minimum 🙂

      Ooooh, this is a great idea! I saw these little tiny bags of peppers at Sam's Club during the summer, I bet this would work good with them too. (jealous of your cheese stash)

      I'm going to try this!! But I'll use a huge bell pepper, roast it (or burning it at the stove), peel it, stuff it with your idea and roast it a little more so it can heat up.
      It's gonna be good!!!
