Sunday I made this sandwich on a complete whim. I just bought a bunch of red delicious apples (they were on sale.) I had 2 slices of turkey breast left in the fridge and a few wedges of The Laughing Cow Cheese just waiting to be used.
As you guys may know, I'm a Laughing Cow Community Leader. It's by far the best job I've ever had. I'm such a fan of their products and getting to be creative with them in the kitchen is SO MUCH FUN!

It may sound weird but mixing the creamy swiss with just a bit of honey and a dash of cinnamon makes an indulgent spread that goes wonderfully with apple and turkey on a sandwich. There's no need for mayo or mustard or any other condiments. It's just a light, fun way to jazz up a seasonal sandwich.
Here's what I did...
Ingredients
- 1 Laughing Cow Light Creamy Swiss Wedge
- dash ground cinnamon
- ¼ teaspoon honey (~1.5g) (just a touch)
- Whole Wheat Sandwich Thin or an English muffin would work great too!
- ½ of an apple sliced thin
- 2 oz of sliced deli turkey
- handful of baby spinach
Instructions
Mix the cheese, cinnamon, and honey together until creamy. Smear it on the bottom of the sandwich thin. Top it with apples, then the turkey and finally the spinach and top of the thin.
Enjoy!
I was surprised how filling this was especially after seeing the nutritional information. It reminds me once again how important flavor and creativity is for me when being satisfied in the food department.

This might be a silly question, but how do you get the apples slices so thin?

Hi Michele,
I just leave them whole and slice from the side. The first one is all skin, which I eat but then they slice nicely after that until I hit the core. It may help to slice off the bottom so the apple stands without wobbling. Hope that helps!
